Well I made it to the big 100.

100 posts, I can’t believe it!

To celebrate my big 100 I thought I’d pick a recipe that got so much love and attention from all of you.

So here it is…  Chicken Divine!

Serves: 8  Prep time: 30 minutes  Cook time: 40 minutes

10 ounces steamed broccoli

3 large boneless chicken breasts

1 T olive oil

1 10 ounce can cream of mushroom soup

8 ounces buttom mushrooms, halved

1/2 cup milk

1/2 cup light mayonnaise

1/2 cup light sour cream

2 t. fresh lemon juice

1/2 t. curry powder

1 can sliced water chestnuts

S&P

1/2 cup grated sharp cheddar cheese

1/2 cup french fried onions

4 strips bacon chopped

Preheat your oven to 375 degrees.  Season your chicken breasts with olive oil and salt and pepper.  Bake for 25 minutes.  mas memoirs   100 Posts!Meanwhile heat a small skillet over medium heat.  Add your chopped bacon and saute until crisp.  Remove and allow to drain on a paper towel.

While your chicken cooks, assemble your casserole.  mas memoirs   100 Posts!In a 13×9 pan arrange your broccoli on the bottom.  In a large bowl combine soup, milk, mayo, sour cream, mushrooms, lemon juice, curry powder, water chestnuts.  Stir to mix well and season with salt and pepper.  mas memoirs   100 Posts!

Once your chicken has finished cooking remove it from the oven and slice it into thin strips.  Arrange the chicken over the broccoli.mas memoirs   100 Posts! Pour the soup mixture over the top of the chicken and broccoli.  Top with cheddar cheese and fried onions.  Cover with foil and bake on 375 degrees for 30 minutes.  mas memoirs   100 Posts!Remove foil and sprinkle with bacon and cook uncovered for an additional 10 minutes.  Serve with brown or white rice and enjoy!

    Oh, and I just replied to the comment that you left in blog… I get the comments sent to my email and I thought I replied to your email, but right as I was hitting send I noticed it said “no-reply” in the address box. Oops! I always forget to check, I just assume I can reply to everybody that way. *lol*

    Anyway, here is what my email said…

    Aww! I wish I would have watched it. Having Dave read on video was huge for us, Dawson loved it. Luckily Daddy is going to be able to read to Dawson in person starting on Friday! Yay!!!!! At least until June. Boo!

    I was thinking about posting a blog about different things we did and some free stuff that I found that helped us out too, in case anybody with a deployed spouse reads my blog, or knows somebody that could use some of the things we had. Hopefully I can get it posted within the next couple of weeks. I have a feeling we are going to be pretty busy around here for awhile. :)
