This Crock Pot version is easy and delicious!

Crock Pot Corned Beef and Cabbage

Serves: 6 Prep Time: 10 minutes  Cook Time: 8 hours

WHAT YOU NEED:

1 3-4 pound corned beef brisket (with seasoning packet)

1 lb potato cut into bite sized pieces

1 bag baby carrots

2 onions quartered

1 bulb fennel, sliced

2 garlic cloves

1 can beef broth

3 T apple cider vinegar

2 T brown sugar

2 T soy sauce

2 garlic cloves minced

S&P

1 head cabbage cut into 6 wedges

WHAT TO DO:

Toss potatoes, carrots, onions, fennel and 2 whole garlic cloves into the bottom of a slow cooker.

In a large measuring cup combine beef broth, spice packet from the corned beef brisket, cider vinegar, soy sauce, brown sugar, minced garlic, S&P and stir to combine.

Place the brisket, fat side up) on top of vegetables in slow cooker.  Lay wedges of cabbage around brisket.  Pour beef broth mixture over corned beef and cabbage.

Cover and cook on low for 8 hours.

Remove corned beef from slow cooker and slice thin on an angle.

Serve on a platter along with veggies and potatoes.

This recipe comes straight from my girl, Michelle.

She makes a mean pot o’ wings.

Can’t wait for Superbowl to eat ‘em again.

Best Football Wings Ever

WHAT YOU NEED:

3/4 cup of soy sauce
2 tsp of garlic powder
1 1/2 cup of sugar

6 lbs of wings (cut)

WHAT TO DO:

In a large bowl comgine the soy sauce, garlic and sugar.

Toss in the wings and let marinade overnight for best taste.

Be sure to mix at least one time during the marinating so as to get all of the wings covered in the yummy sauce.

Preheat your oven to 325.

Cook at 325 degrees for 1 – 1 1/2 hours!

Time Saving Week – Slow Cooked BBQ Beef Sangies

As the kids are back to school…

That means we are back to activities.

Like karate…

And hockey…

And homework…

And PTO meetings.

That puts a bit of a strain on dinner.

This week is all about quick dinners with very little effort.

Just because your life is crazy doesn’t mean the Pizza guy should be your best friend.

BBQ Beef Crock Pot Sangies

Serves: 6
Prep time: 20 minutes
Cook Time: 9 hours

WHAT YOU NEED:

1 T canola oil
2 ½ lbs. lean boneless chuck roast
1 c ketchup
2 T Dijon mustard
4 T brown sugar
3 cloves crushed garlic
1 spring of thyme
1 t chili powder
½ t cayenne pepper
1 T Worcestershire sauce
3 T red wine vinegar
1 t liquid smoke flavoring
S&P
1-2 Packages Hawaiian Sweet Rolls

WHAT TO DO:

Heat a large skillet over medium high heat.

Season beef liberally with S&P.  When the skillet gets good and hot, brown beef on all sides.

Place beef in slow cooker.

Combine remaining ingredients, except for the hawaiian rolls, in a bowl.  Mix well and pour over the meat.

Cover and cook on low 8 – 9 hours.

Shred the beef by pulling it apart with 2 forks. Set aside on a serving platter.

Coat with sauce from crock pot to get the desired texture.

Spoon on Hawaiian rolls.

Way better than tipping the pizza guy!

Macho Quiche

Macho Quiche

I make Quiche pretty much every holiday. It’s seems difficult and fancy but it really comes together super quick. This quiche is great to make in the morning and you can eat it all day, for breakfast, lunch or dinner! Plus all the goodies inside make it strong and sturdy and something all my boys adore!

Serves: 6
Prep time: 20 minutes
Cook time: 1 hr 5 minutes

WHAT YOU’LL NEED:

1 package (about 3 cups) shredded hash browns
1 T extra virgin olive oil
3 T butter
4 eggs, beaten
1 c half & half
1 lb bulk italian sausage crumbled
½ c onions, diced
3/4 c diced asparagus
1 c shredded cheddar
½ t paprika
S&P

WHAT TO DO:
Preheat oven to 450 degrees F. Heat a large skillet over medium high heat. Add in your sausage and cook until browned, about 8-10 minutes. Remove sausage with a slotted spoon and place allow to cool on a plate. In the same pan add in the olive oil and butter. Once the butter has melted, add in your hash brows. Toss to coat well with butter mixture and season with paprika and S&P.

Grab a 9 inch pie plate and pour in the potato mixture. Press them into the bottom and up the sides to form a crust. Bake until golden brown and just starting to crisp, about 25 mintues.

Meanwhile, in a large mixing bowl, combine the eggs, half & half, sausage, onions, asparagus, cheese, and season with salt and pepper. When your hash brown crust is ready ladle the egg mixture over the crust and return it to the oven. Drop the temperature to 350 degrees and bake for 40-45 minutes until golden and puffy.

Slow Cooked BBQ Beef Sangies

Serves: 6
Prep time: 20 minutes
Cook Time: 9 hours

When the holidays roll around and you see the same ol thing time and time again, sometimes it’s good to shake things up a bit. This is a quick recipe that you can toss together in the morning on your way out the door to hit the mall and when you’re home and ready to wrap the gifts, dinner is waiting for you.

1 T canola oil

1 lb chicken tenders cut into bite sized pieces

1 lb andouille sausage sliced

1 onion, diced

4 stalks of celery, diced

1 green pepper, diced

1 can diced tomatoes, drained

2 cups chicken broth, warm

1 chicken bouillon cube

1 T dried oregano

1 T dried parsley

1 T cajun seasoning

1 t cayenne pepper

1 t dried thyme

8-10 dashes hot sauce

S&P

1 pound frozen shrimp

recipes for kids dinner crock pot    Crock Pot JambalayaAdd your chopped veggies to the bottom of your crock pot.  Top with chicken and sausage.  Pour tomatoes on top.  Mix together warm chicken stock, bouillon, oregano, parsley, cajun seasoning, cayenne, thyme, and S&P.  Pour over the chicken and sausage.  Sprinkle on hot sauce.  Mix well.  Cook on low for 7-8 hours.  Serve over rice.

Serves: 8  Prep Time: 10 minutes  Cook Time:  1 hour

1 T Canola Oil

2 pounds ground beef (or you could do 1 lb beef/1 lb ground pork)

1 large onion chopped

1 clove garlic chopped

1 pablano pepper seeded and chopped

1 green bell pepper seeded and chopped

1/2 T dried oregano

1 T ground cumin

1/2 T chili powder

1 t cayenne pepper

1 t corriander

S&P

1 8 oz can tomato sauce

1/2 can Guinness stout (or other dark beer)

1 14 oz can pinto beans, drained

1 14 oz can kidney beans, drained

1 can beef stock

For Garnish

chopped red onion

chopped tomato

chopped avacado

chopped cilantro

shredded cheddar cheese

sour cream

tortilla chips

soups healthy snacks for kids recipes for kids kids lunch ideas side dishes dinner crock pot appetizers    Game Day ChiliHeat a large stock pot over medium high heat and add in your oil.  When the oil is hot toss in your ground beef and allow to brown.  Once browned add in your onions and peppers and allow the veggies to soften, about five minutes.  When the onion and pepper is soft, toss in the garlic and cook for an additional minute or so.

Add in your spices and toss to coat well.  Season with S&P.  Next add in your beans and allow to heat a bit.  Deglaze the bottom of your pot with the half a can of Guinness.  Be sure not to let the other half go to waste!  Pour yourself a glass and enjoy while you scrap the bottom of the pan for all the stuck on goodness.  Stir in your tomato sauce and beef broth and allow to come to a boil.  Once it boils turn the heat back to a med-low and allow to simmer for 45 minutes, stirring occasionally. soups healthy snacks for kids recipes for kids kids lunch ideas side dishes dinner crock pot appetizers    Game Day Chili
