Because we’re celebrating FRUIT WEEK here at Ma What’s For Dinner.

So come and get your yummy on…

Today is a breakfast that the boys and I love…

BREAKFAST BERRY PARFAITS.

A take off on the dish my dad used to make me when I was a kid with nectarines, sour cream and sugar.

This is our version with our favorite berries.

WHAT YOU NEED:

1 pint blackberries (organic & local if possible)

1 pint blueberries (organic & local if possible)

1 pint strawberries, sliced (organic & local if possible)

1 cup plain greek yogurt (we like FAGE)

1 bunch fresh mint

4 t sugar in the raw

WHAT TO DO:

On the bottom of four glasses, layer in your washed blueberries.

Spoon on some yogurt to cover the berries.

Next layer in your washed strawberries and cover with another layer of yogurt.

Top off with washed blueberries and a dollop more of yogurt.

Sprinkle with sugar in the raw and top with a mint leaf.

Breakfast of champions!

Want to get fancy?  Sprinkle with a bit of granola or honey.

Want to make this dessert?

Top with chocolate shavings or caramel sauce!

Don’t have fancy glasses???  Never fear…make it on a plate.

Passover Week – Charoset

One of my favorite things about Passover is Charoset!

Charoset, if you’re not familiar with it, is sort of like a fruit salad.

It’s made from yummy apples and nuts sweetened with cinnamon and a little sweet wine.

So yummy on a big ol’ piece of matzoh.

Give it a try…the kids’ll beg for more!

WHAT YOU NEED:

3 apples, peeled, cored and chopped

1/2 cup chopped nuts, I like pecans

1/2 t ground cinnamon

1/4 cup honey

1/2 T lemon juice

1/3 cup sweet kosher for Passover wine, I like Manischewitz

WHAT TO DO:

In a medium bowl combine apples and pecans.  Stir to combine.  Sprinkle on cinnamon, honey, and lemon juice.  Stir well.  Add in your wine and stir again.  Cover and refrigerate until ready to serve.

Serve on your seder plate or as a snack with matzoh.

Try and double or triple this recipe then keep it in the fridge.  You can put it on top of cottage cheese or yogurt for a yummy breakfast or lunch treat!

St. Patty’s Day – Pots of gold at the end of the rainbow

These refreshing little sipsters are good all year round

But your little leprechauns will be drinking them up this time of year for sure!

WHAT YOU NEED:

strawberries

oranges

pineapple

kiwi

and

blueberries

WHAT TO DO:

Layer chopped fruit into an ice cube tray.

red = strawberries

orange = oranges

yellow = pineapple

green = kiwi

blue = blueberries

Top each cube with seltzer water.  Freeze.  Serve with pineapple juice and fun straws.

Tasty Tidbit – To wash or not to wash?

Always wash fruits and vegetables before you eat or prepare them. You can even wash them when you bring them home from the market then store them in plastic bags.

But don’t wash fruits like berries until just before you’re about to use them, they’ll get moldy faster if they’re stored wet. I don’t wash mushrooms, they tend to soak up water. Just wipe them off with a moist paper towel.

Washing fruits and veggies is a great job for your young chefs. They love to get wet and there is no cutlery involved!

And always remember, whenever possible, buy local produce!

Tropical Noodle Kugel

What do you get when you cross a Pina Colada and Bubbie’s Kugel?

Tropical Noodle Kugel!

Try this fun fruity version of the good ol’ fashioned kind that Bubbie used to make.

It’s like being in the islands…on Hanukkah.

Tropical Noodle Kugel

Serves  8-10  Prep time:  25 minutes Cook Time: 55 minutes

Try this fun new spin on Bubbie’s traditional noodle kugel.  This one has the feel of the islands infused into its layers of yummy creamy goodness.

1 16 ounce package egg noodles

½ cup unsalted butter, melted

6 large eggs

2 cups sugar

2 cups sour cream

1 t coconut extract

1 t cinnamon

1 cup sweetened coconut milk

1 cup cottage cheese

¾ cup diced pineapple

1 t kosher salt

Topping:

¾ cup graham cracker crumbs

½ cup shredded coconut

3 T unsalted butter, melted

Preheat your oven to 350 degrees.  Bring a large pot of water to boil.  When it’s boiling salt the water well and add noodles.  Cook to al dente, about 1 -2 minutes shy of package directions for fully cooked noodles.  Drain well and toss with melted butter.

While your noodles cook grab a large mixing bowl.  Stir together eggs, sugar, sour cream, coconut extract, coconut milk, cinnamon, salt and cottage cheese.  When well blended, gently fold in your pineapple chunks.   Add noodles and mix well.

In a small bowl combine remaining melted butter, graham cracker crumbs and coconut.  Transfer noodle mixture to a greased 13×9 baking dish.  Top with graham cracker mixture.

Bake uncovered at 350 degrees for 50-55 minutes.  Let stand for 15 minutes before serving.

Trust me…This is the most delicious kugel you have ever had.  Try not to eat the whole pan before Bubbie gets to try it.   Not that I ate the whole pan, well not on purpose at least…

Turkey Tom Foolery

Seems to me there are a lot of shortened days and days off around this time of year.

So we’re always looking for something fun to do in our off hours.

Enter the Thanksgiving crafty afternoons.

Today we’re making turkeys…

fruity turkeys…

apple turkeys…

Fun turkeys your little ones can make in a flash and eat even faster.

Here’s our recipe for

Apple Turkeys

Prep Time: 10 minutes

Craft time:  20-30 minutes

WHAT YOU NEED:

Apples (for the turkey body)

toothpicks

pretzel sticks

fruity cheerios

raisins

dried pineapple

dried apricots

marshmallows

WHAT TO DO:

After positioning your apple on its side.  On the bottoms of your apples, stick 4 toothpicks to give your turkey some legs to stand on.  You can stick a raisin or marshmallow on the bottom of each leg for his feet.

Next let your kids decorate the turkey’s feathers.  Stick 4-5 toothpicks into the top/rear part of your apple (away from the stem).  Your kids can thread the toothpicks with raisins, dried pineapple, dried apricots or cheerios to make the turkey’s feathers.  Top each feather off with a big raisin or a mini marshmallow to keep things in place.  In between each feather you can add a pretzel stick for added color.

We used big marshmallows or big pieces of dried fruit for the turkey head.  You could even cut some construction paper and color a turkey head if you like.  Get creative, have fun, happy turkey day!
