<p>Serves 6  Prep time: 10 minutes  Cook time:  10 minutes</p>
<p>1 store bought pizza crust<br />
1/2 cup pizza sauce<br />
1 cup shredded mozzarella cheese<br />
1/2 cup diced ham<br />
1 can cubed pineapple</p>
<p>Preheat the oven to 425 degrees.   Remove pizza crust from wrapper and place on a baking sheet.  Cover with pizza sauce leaving a one inch border around the sides.  Sprinkle with cheese then top with diced ham and pineapple.  Cook at 425 for 8-10 minutes.  Slice with pizza cutter and enjoy with salad!</p>

<p>½ cup       		Butter room temperature<br />
2/3 cup    		Brown sugar, packed<br />
1 t           	  		Baking soda<br />
¾ t	           		Baking powder<br />
2 eggs        Beaten<br />
1 cup        		All purpose flour<br />
¾ cup       Whole wheat flour<br />
3 cups       		Multi grain cereal<br />
¾ cup      		Dried blueberries cranberries,<br />
and raisins mix</p>
<p><strong>Cooking Instructions</strong></p>
<p>Preheat oven to 350 degrees.  In the bowl of an electric mixer beat butter, sugar, and baking soda until combined.  Add in eggs and beat until mixed.  Add in flours and beat until smooth.</p>
<p>Mix in cereal and dried fruit with a wooden spoon.  With your hands form batter into large golf ball sized balls and place on a greased cookie sheet.  Press down on each ball with a spoon to flatten it slightly.  Place cookies in the oven and bake for 12 &#8211; 15 minutes.  Let stand 1 minute then transfer to cooling rack.  Enjoy these warm with a glass of milk.</td>

<strong>FOR THE MEATLOAF CUPCAKES:</strong><br />
1 ½ lbs   	Ground beef<br />
1               			Egg, bean<br />
1 clove    	Garlic, chopped<br />
½ cup     		Bread crumbs<br />
2 T           			Worcestershire sauce<br />
¾ cup      		Chili sauce (you can use ketchup  too)<br />
½ cup     		Onions, finely chopped<br />
½ cup     		Carrots, finely chopped<br />
½ cup     		Mushrooms, finely chopped<br />
½ cup     		Red pepper, finely chopped<br />
½ cup     		Canned fried onion strips</p>
<p><strong>FOR THE MASHED POTATO FROSTING</strong><br />
1 lb	          	Russet potatoes peeled and cubed<br />
½ cup      		Milk<br />
3 T.	         	Sour  cream<br />
2 T           			Butter</p>
<p><strong>Cooking Instructions</strong></p>
<p>Preheat your oven to 375 degrees.  Place your peeled cubed potatoes in large pot of cold water over high heat.  Bring to a boil and cook until fork tender (about 8-10 minutes after water boils depending on the size of your cubes).</p>
<p>In a large bowl combine ground beef, egg, bread crumbs, garlic, Worcestershire sauce, chili sauce, onions, carrots, mushrooms, red pepper, fried onions and S&amp;P.  Mix together with your hands until combined.  Spray a muffin pan with cooking spray.  Mold your meatloaf mixture into cupcake sized balls and place in muffin pan.  You’ll get about 8-10 cupcakes.  Place in oven and cook at 375 for about 25-30 minutes.</p>
<p>Drain your potatoes and return to pan.  Pour in your milk, sour cream and butter, and season with S&amp;P.  Using a hand mixer whip your potatoes until smooth and set aside to cool a bit.  Take a large plastic Ziploc bag (or a pastry bag if you have one) and cut a small hole in the bottom corner.  Spoon your mashed potatoes into the bag then pipe out the potato on top of the meatloaves to look like frosting on a cupcake.   Serve ‘em up hot, who doesn’t love cupcakes?  Especially for dinner!</p>
<p>Meaty Morsel:  Decorate the tops of your cupcakes with BBQ sauce, ketchup, mustard, cheese, shredded lettuce, chopped tomato, anything you or your kids can think of.  Let them have fun with this, they’ll have more fun eating it!</td>

<p>4     whole		Spinach sandwich wraps<br />
1      cup 		Cooked white rice<br />
1      cup		Grilled chicken thinly sliced<br />
½    cup		Carrots thinly sliced<br />
½    cup 		Red peppers thinly sliced<br />
½    cup 		Alfalfa sprouts<br />
½    			Avocado sliced<br />
Mayo or mustard (for sticking)</p>
<p><strong>Cooking Instructions:</strong></p>
<p>Lay out the wraps on your cutting board.  Spread just a thin layer of mayo or mustard over the wrap to help everything stick.</p>
<p>Lay half of the rice down into the center of one of the wraps and press it out so it thinly covers the center of the wrap.  Do the same for the second.  Evenly distribute your chicken between the two wraps laying it in an even row over the rice.  Be sure to keep it in a single line.  Follow suit with your carrots, red pepper, sprouts and avocado.  Now fold in the right section of your wrap over the ingredients and slightly pull then back toward you, then continue to roll over and make your self a tube.</p>
<p>Cut your tube into sushi roll looking slices.  You can cut them straight or on an angle then arrange them on a plate.  Serve these with edamame or even edamame chips!  You’ll have your kids yelling Arigato.</p>
<p>My kids LOVE the sushi restaurant so this was a way for me to make them “sushi” at home (way cheaper by the way) and give them a special treat in their lunch boxes at school.</td>
