Serves: 6 Prep Time: 5 minutes Cook Time: 15 minutes
1 pound farfalle pasta (bowties)
1 pound green beans
8 oz mushrooms, sliced
1 t garlic powder
1 T unsalted butter
2 T extra virgin olive oil
2 cloves garlic, minced
1 t crushed red pepper flakes
½ cup parmesan cheese
S&P
Set a big pot of water over high heat for pasta. Bring to a boil. Once boiling add salt and cook pasta according to package instructions, usually between 10-11 minutes.
While the pasta is cooking bring a smaller pot of water to a boil and cook green beans quickly, just about 2 minutes. Drain and set aside. Meanwhile, add butter to a large skillet over medium high heat. Saute mushrooms until soft, about 5-6 minutes. Season with S&P and garlic powder. Add green beans to pan and toss to coat. Set aside.
Once pasta is cooked, drain water well. In the pot you cooked your farfalle heat olive oil over medium heat. Add in chopped garlic and allow to cook for one minutes. Add in your green bean/mushroom mixture and toss in oil. Add in your pasta and toss to combine. Top with parmesan cheese and S&P. Toss to coat well and serve.

I feel certain that my family wouldn’t go down without a fight on the mushrooms, but I love them and I’m the one who cooks in this house. (I’m so brave when they aren’t around.)
