Serves: 2 Prep time: 5 mintues Cook time: 10 minutes
2 large tortillas
4 slices smokey turkey breats
1/2 cup shredded mozzarella
6 large slices brie
2 T raspberry jam
cooking spray
Heat a large skillet over medium high heat. Spray with cooking spray. Lay one of the tortillas in the pan and begin to build your quesadilla. Turn the heat down to medium. Spread your tortilla with half of the jam. Lay down the brie slices so they cover the tortilla. Next lay down the turkey and top with shredded mozzarella. Spread jam on the other tortilla and lay on top of cheese to make a sandwich. Once the first side is browned carefully flip the quesadilla and cook the other side. Let the cheese get all nice and melty. Remove to a plate and cut into quarters to enjoy as a lunch with a nice salad.

Happy SITS Saturday Fest! Our family LOVES quesadillas! One way I sneak veggies in them for my 16 month is putting either broccoli or spinach in the food processor and then sneaking them in between layers of cheese. He eats them right up!
This sounds so great! I bet it would be great to serve the moms when I host playgroup next week.
Quesadillas are my “go-to” dinner but this would sure class it up!
