Wow! We went from 0 to 60 in seconds here in the Northeast and it is hot! The last thing I want to do when it is hot and humid is turn on the oven or stove. So I cranked the A/C and made up my hubs favorite dinner…my spin on a Chef Salad. It’s filling, delicious, easy and cold! Mmmmm! Plus I got to christen the new salad bowl that my Aunt and Uncle bought me for our housewarming. Yay! Isn’t it pretty??? And yes, I know what you’re about to say…yes the boys eat this. Brady and Cooper love salad and always eat the salad or veggies on their plate first. Keegan on the other hand eats parts of his salad, mainly the beans, cucumbers, cold cuts oh yeah, and his garlic bread…
2 romaine hearts chopped
1 can cannellini beans, drained
1/2 pint grape tomatoes
1 european cucumber diced
1/4 cup red onion diced
12 green olives chopped
3 oz sliced turkey
3 0z sliced swiss cheese
3 0z sliced hard salami
3 oz sliced ham
2 T balsamic vinegar
1 T dijon mustard
1/2 t dried oregano
S&P
1/4 cup olive oil
Place the first seven ingredients in a large bowl and mix gently. Place the cold cuts on top of the salad. Set aside. In a small bowl combine the vinegar, dijon mustard, oregano, salt and pepper. Mix well. Slowly drizzle in olive oil mixing quickly and constantly. Pour over salad and toss. Serve with some crusty bread and enjoy!

I love the idea of the beans…thanks for sharing! I just made a huge salad last night to avoid having to eat on the run…if it’s made, I’m more likely to eat that than something I shouldn’t.
Can you believe how freaking hot it was here yesterday???
My boys are not very big salad eaters. They’ll eat veggies, but not much salad. My fault for not having a whole lot for them.
I love pasta salads in the summer, though. Have any of those to share?
Looks great! I agree when it is hot oven off and either grilling or something cold!!
Yes, salad weather over here too. Good call.
It’s hot here too, and a cold salad for dinner sound just right!
p.s. did you know you’re a no-reply blogger? I can’t email you in response to your comments on my blog….
;-(
Alex, this looks delicious as usual. I love a good salad and your addition of the cannellini beans makes it perfect! Thanks for sharing another one of your delicious recipes!
This looks perfect for warmer weather. You really have great recipes here. I hope you are having a wonderful day. Blessings…Mary
I so agree with not cooking in the heat. Last night we had toasted tomato sandwiches.

i love how with meat or beans, you can feel like you’ve had a more hearty meal and feel full, longer.
This looks delish. I LOVE salads for dinner, especially in the summer. And as you know about my picky eaters, there is no way they would eat this. However, I am going to keep trying!!
The beans are always a nice addition to a salad I think…I just cannot do red onions! Ugh the heartburn they give me. Would green or chives be just as good?
It’s already 90 here…but to me, it ain’t hot until 100 +. Last year we had 100 days of 100 + weather and I thought I was going to die. At that point you don’t want to eat, let alone MOVE.
One of my favorite salads ever. I used to feel so cool ordering this when I was younger. I like the addition of the beans…yummy.
Couldn’t agree with you more honey! Turning on the oven in the heat of the summer is a definate no, no.
This salad sounds delicious and is a healthy alternative to beat the summer heat. It’s refreshing and is oh so yummy!
Cheers~
