MMMashed Potatoes

We love love love our potatoes in this house.  We like ‘em baked, roasted, grilled and especially mashed!  I threw a bunch of stuff from the fridge together for these babies and all anyone could say was MMMMMMM.  So here they are, MMMMMMahsed Potatoes!

Serves 6  Prep Time: 5 minutes  Cook time: 20 minutes

1 1/2 lbs baby red potatoes

3 cloves garlic, peeled

S&P

splash of cream

1/4 cup chicken stock

1/4 cup parmesan cheese

2 T butter

side dishes   MMMashed PotatoesCut your potatoes into quarters and toss them in a medium sized pot with the garlic cloves.  Fill with cold water.  Set over high heat and bring to a boil.  Once the water is boiling season the water with salt.  Cook until fork tender about 8-10 minutes.  Drain well and transfer to a bowl.  Toss in remaining ingredients and mix with hand mixer or smash with a potato smasher.  Serve with a bit of sauce from chicken marsala.

    About your bull mastiffs and sleeping on the beds – for a while. I always wanted our Shepherd to sleep on our bed, but I can see now that at 117 pounds he wouldn’t have been a small addition. :-)

    YUM! but neither of my boys will touch mashed potatoes…strange, right?! Those do look good and might have to try it anyway!

  7. yummy. I love mashed potatoes. I usually use a fork because 1. I don’t own a potato masher and 2. I kinda like them chunky. mmmmmmmmmm for sure.

    When I was a kid mashed meant just taters, butter, and milk. But my mother-in-law puts pickels in hers. I am learning you can mix some really good stuff in and make them even better.

    Anyway, I didn’t really like Eat, Pray, Love either. I found myself thinking, “It must be nice to take a year out of your life to recover from your divorce…imagine that????” I read it for a book club, but a friend suggested Committed, so I thought I’d give it a go, because it’s less “fluff” than I usually read.

    And I LOVE mashed potatoes and am slowly reforming my kids. The Girl Child is on board, still working on The Boy!

    Mashed potatoes are probably my family’s favorite way to eat potatoes but I never seem to make them. I’ll have to make a batch one night soon.
