Stick to your ribs Steak Tacos
Last weekend we had some of my old college girlfriends up with their families for a BBQ.
It was the first time we had gotten our families together.
I can’t believe that between us we have 9 kids.
Oh, how times have changed!
Instead of planning after hours parties and heading to the cafeteria to eat away a hangover…
We were discussing what kind of bottles we thought worked best and how many soccer practices a week a 5 year old should have.
Oh how the mighty have fallen…
Well, before the party the hubs freaked out and didn’t think we had enough food.
Really, honey?
Have you met me?
Of course we have enough food.
Yet, off he went to the store to purchase more and he came home with meat…lots and lots of meat. Needless to say I have about 7 extra steaks in the fridge to use up this week. Get ready for some steak leftover recipes guys! Grill a lot of it this weekend…you’ll be glad you did.
Serves 4 Prep Time: 1o minutes Cook Time: 15 minutes
1 T canola oil
2 large leftover steaks (you know the one your hubs thought you needed) If you are a vegetarian you could use portobello mushrooms instead
1 large onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 t garlic powder
1/2 t dried oregano
1/2 T ground cumin
1/2 T ground corriander
1/2 T chili powder
1/2 cayenne pepper
S&P
tortillas
shredded cheese
guacamole
sour cream
hot sauce, this is optional, but I like it spicy!
In a large cast iron skillet heat your oil over medium high heat. When the oil is hot add your onion and peppers. Saute for about 5 minutes until they are softened, season with S&P. Toss in your leftover steak and season with the remaining spices and additional S&P. Cook until heated through, about another 5 minutes.
Build your taco by laying your steak taco mixture in the middle of your tortilla. Top with cheese, sour cream, quacamole, and hot sauce. Need some good guacamole recipes? Here are two of my favorites…
My guacamole is kind of a combo of these. I’ve made a lot of guac in my day and I’d swear by these two. YUMMY!!!
Happy Friday Follow all! Please leave me a note to say you were here and I’ll get ya back over the weekend!
Doggies in a sleeping bag
Come on now, admit it, you love pigs in a blanket don’t you? Every time I make the little version of these guys for the kiddos at a party or BBQ guess who eats them all? Oh yeah, you know it, the parents. EVERY. SINGLE. TIME. I guess that shows that we’re all still kids at heart, and in my mind, that’s a good thing.
So I decided to whip up the big version of the party favorite for dinner as a special request. My darlin’ (and sometimes downright wildman) Brady was looking at a beautiful scrapbook given to him by his best friend, Brody, in California when we moved earlier this year. Ok, well Brody didn’t make the scrapbook but his mom, Corine, did. It’s gorgeous and it’s a beautiful testament to Brady and Brody’s wonderful, though brief, friendship. They met their first day of preschool at 2 years old and were instantly best buds. Brady still reads it every night before he goes to bed. Uh, yes, it’s the most adorable thing ever. In the scrapbook there’s a picture of the boys at our Annual Fitzpatrick Family Halloween Haunt and Brady is eating a mini pig in a blanket. For some reason yesterday Brady fixated on that thing and begged ALL DAY LONG to have them for dinner. So he climbed up on the counter and we made the big boy dinner version of mini pigs in a blanket…Doggies In A Sleeping Bag.
Serves: 4 Prep time: 10 minutes Cook time: 15 minutes
FOR THE DOGGIES:
8 hot dogs (can use reduced fat, turkey dogs, even tofu dogs)
½ c shredded cheese
½ c red pepper, diced
1 can crescent dinner rolls
FOR THE SAUCE:
½ c ketchup
¼ c mustard
2 T brown sugar
1 t garlic powder
3 T red wine vinegar
Preheat your oven to 375 degrees. Unroll your crescent rolls being careful to leave your squares intact, using 1 triangles for each doggie. Set one square down on a cutting board. Sprinkle with cheese and lay diced red pepper down on the right side of the square. Place the doggie on top of the cheese and red pepper. Pull the right side up over the doggie and roll toward the other side covering him up in his sleeping bag. Repeat with other pieces.
Bake at 375 for 10-13 minutes until golden brown on top. Serve with steamed veggies or salad and sauce for dipping.
What’s your favorite go to party food?
Italian Cheeseburger Macaroni
As many of you know, the hubs favorite food on the planet is Hamburger Helper. Seriously, he loves it. His favorite of all time is the Cheeseburger Macaroni. And when I cook up a meal for him and he really loves it he always asks me with love sparkling in those beautiful green eyes of his, if this is in fact, Hamburger Helper. It’s his equivalent of a 5 star rating. Isn’t he cute? Anyway, since all my boys love that creepy oversized white glove so much I thought I’d toss together an italian version of their favorite meal. Give it a go, it’ll be your favorite too!
Best thing about this dish is you can make it in advance and leave it in the fridge to take out and make when you get home after a long day at the playground and everyone is hungry and tired and you don’t feel like cooking because the dog pulled out the trash can and now you have to clean the kitchen and still give everyone a bath and dinner and all you want to do is pour a big glass of wine and watch who Ali chooses on The Bachelorette and dinner is the last thing on your mind…not that I would know anything about that. This is totally hypothetical, I’m just saying.
Serves: 6 Prep Time: 20 minutes Cook time: 30 minutes
2 T olive oil
1 lb ground beef
½ large onion, chopped
1 can diced tomato
1 clove garlic, chopped
8 oz mushrooms sliced thin
½ T dried oregano
1 t dried red pepper flakes
1 lb whole wheat penne pasta
3 T butter unsalted
3 T all purpose flour
3 cups whole milk
1/2 t fresh grated nutmeg
2 cups shredded sharp cheddar cheese
1 cup shredded swiss cheese
Preheat oven to 375 degrees. Set a large pot of water over high heat to boil for your pasta. In large skillet heat olive oil over medium high heat. When oil is hot add in onions and mushroom and sautee until soft. About 6 minutes or so. When they are soft add in garlic, season with salt and pepper and cook for an
additional minutes. Add in your ground beef and cook until brown, about 5 minutes. Once meat has browned toss in the tomato, oregano, and red pepper flakes. Season again with S&P and allow to simmer for about 5 minutes.
Meanwhile, in a large saucepan melt butter over medium high heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk, and bring to a gentle boil, stirring constantly. Once the milk has thickened add in nutmeg and
season with S&P. Reduce to medium low heat and melt in cheddar and swiss cheeses. Allow to cook on low for a few minutes.
When water is boiling season water with salt and add pasta. Note package cooking time and reduce by 2 minutes, the macaroni will continue cooking in the
oven later. Once pasta is cooked, drain and return to pot. Toss the penne with cheese mixture.
Spray a baking dish with cooking spray and pour half of the pasta mixture into the bottom of the dish. Spoon the Italian burger mixture over the top in an even layer. Then cover with remaining pasta. Top with additional cheddar cheese if desired. Bake at 375 for 30 minutes and enjoy!
Dance like nobody’s watching
This is my second link up to the one and only Shell’s Pour Your Heart Out. She’s so inspiring…
Earlier this month the adorable Katie at Sassy Silly Spunky Momma asked me to guest post. I was so excited as this was my first guest post that wasn’t another recipe site.
I jumped at the chance!
Then…
Panic set in.
As you all know, my blog is all about recipes. That’s what I usually write about. Me and the boys in the kitchen whipping up some delight.
All of the sudden I had to be witty and engrossing for someone else?
Ahhh!
The pressure.
As Katie’s blog is not about food I decided to embrace my inner blogger and blog like nobody’s reading…and it was fun, so I thought I’d share it with all of you. Care to join me?
Have your ever heard the saying “to dance like nobody’s watching?” The first time I heard it I loved it. Really loved it. I thought, yes of course, that is how everyone should live their lives, not caring what anyone thinks, and then I remembered that I have never ever in my entire life not cared what anyone thinks. I was always the girl in high school concerned about her appearance, about what people thought, about how pretty I looked, how smart I came across, how popular I was, yadda yadda yadda. It was exhausting. In college, it was no better. I was constantly concerned with my grades, my friends, my reputation. And even now, you will NOT catch me in a bathing suit. But at the end of the day, who on earth am I trying to impress? My husband adores me, my kids love me no matter what? What is all this about? Why can’t I just dance like nobody is watching?
So a few days ago I go to my first Zumba class. Yes it’s totally ridiculous and it’s a bunch of old ladies and young hot teeny boppers jumping around an aerobic studio but when I don’t feel like torturing myself for 45 minutes on a treadmill sweating with the masses is my happy alternative. See, I’m not a dancer, I never was a dancer. I was a gymnast for a while, but graceful I was not! I believe my nickname was “froggy legs.” Anyway, I remember taking some modern dance classes somewhere around junior high and always being the worst one in the class sort of got to me after a while, so I quit. I’m not exactly coordinated when it comes to choreography.
But you know what? When you just can’t take another kickboxing or pilates mat class you just gotta step it up right? So look out Pasha and Anya (uh, that’s a SYTYCD reference for those of you who actually have lives and aren’t attached to your TVs) here comes Alex.
OH EM GEE! Well I almost killed the poor old lady next to me during some samba shimmy sashay thing but I survived it. But what struck me during the whole thing was that I couldn’t take my eyes off this woman in the front.
Let’s call her, Sally.
Well, Sally looks like life may have not been the easiest for her. She’s in her early 30’s, as homely as all get out, she’s sort of a big girl, she’s got the big oversized glasses and if she was a dude she’d be wearing a pocket protecter.
Let’s put it this way, if I was back in high school, we would not have asked her to sit at our lunch table (and yes, as an adult I now know that’s wrong, but that’s a whole other post.)
Anyway, Sally pretty much screams dork. But there she is, front and center, right in front of the mirror, right next to that tiny little energizer bunny of an instructor…Sally is hard to miss. And she’s moving before they even turn the music on. I sort of giggle to myself and the music gets going.
Ok, these people don’t waste anytime. We’re moving and grooving and I’m trying to pick up and place my feet like a billion times faster than any kickboxing class. Oh and apparantly there are all these muscles in the hip area that I clearly haven’t used in decades, much to my hubs dismay.
But then there’s Sally…she’s a machine, she’s sweating and adding hops and getting her swerve on! Now, her dancing skills are not better than mine, and we’ve already established that is not saying much, but you know what?
SHE DOESN’T CARE.
SALLY IS HAVING A BLAST.
And her reckless abandon is making me care a bit less about how stupid I look, and I assure you I did look stupid, but suddenly I’m adding a bit of swagger, I’m adding a little roll, I’m tossing in the sexy arms, and I’m having a blast. Suddenly I’m dancing a fool, even if there are a bunch of college cheerleaders behind me, I mean really? Cheerleaders?
I learned a valuable lesson at Zumba. And I can’t wait to go back.
So thank you, Sally.
Thank you for helping me get over myself…
For helping me learn to live a bit…
For helping me let go a bit.
Thank you for teaching me to dance like nobody is watching.
If you’re a fan of So You Think You Can Dance, and we’ve already established that I am and I don’t, then you know that last Saturday July 31st, was National Dance Day. It is supposed to include a variety of dance-themed activities for people of all ages. It will empower, challenge and inspire everyone to try various styles of dance ranging from hip-hop to ballroom to anything that moves. Above all, it will encourage everyone to DANCE as a means to stay fit and be healthy. I was at a zumba class. What did you do? And did you do with as much passion as Sally?
Hello there! If you’re here from the Friday blog hops welcome welcome! Please leave me a note that you were here so I can get back to you this weekend!
Ma, What’s for Dinner was inspired by the four most feared words in the English language. The phrase that moms (and dads) hear every day. Not only are kids asking the question…but everyone knows they already have their reply ready...Yewwww, I dont like that.
Ma, What’s for Dinner? is about real food and real ingredients, cooked out in the open and with the help of your children. It isn’t about disguising ingredients or about using hard to get ingredients. It is about family cooking and presenting everyday foods in a way that your kids will enjoy and bringing everyone into the kitchen together.
