Ranch Fish Nuggets

dinner   Ranch Fish Nuggets

The best part is they’re not fried!  They’re baked!

Serves: 4                         Prep time: 15 minutes  (plus 1 hour for marinating)                     Cook time: 35 minutes

WHAT YOU NEED:

1 ½ lbs Tilapia fillet

4 T olive oil, divided

1 packet Hidden Valley Ranch Dressing mix, divided

2 T red wine vinegar

1 c all purpose flour

3  egg whites

½ c  milk

2 c panko bread crumbs

½ c  parmesan cheese

WHAT TO DO:

Cut your tilapia into bite sized nuggets and place into a plastic storage bag, set aside.

In a small bowl combine 2 T olive oil, 3/4 of the Hidden Valley Ranch Salad Dressing packet, and red wine vinegar.  Mix well and then pour over the fish in the bag.  Let it sit in the fridge for 1 hour.

Preheat your oven to 375 degrees.

Get out three large bowls.  Add in your flour,  and a bit of S&P to the first, the egg whites and milk to the second, and the breadcrumbs, cheese and remaining salad dressing mix to the third.  Mix to combine all the ingredients in each bowl.  Beat the egg white and milk with a whisk for a minute or two.

Spray a baking sheet with cooking spray to keep your fish from sticking.

Remove fish from marinade and shake off the excess.

Dip each fish stick into the flour mixture.  Shake off excess flour and dip into the egg/milk bowl.  Then dip into the bread crumbs and lay onto your baking sheet in a single layer.

Continue with the rest of your fish sticks.  Drizzle the fish with a bit more olive oil and put into the oven.

Bake for 18 – 20 minutes or until nicely browned.   Serve with Hidden Valley Ranch Dressing, tartar sauce or ketchup for dipping, and veggie crudite for dunking!

    My boys, especially Nicholas, ADORE fish sticks. I’m always excited to find a homemade recipe and especially one that is baked! For my boys, it’s ketchup. I’m amazed at what they’ll dip in ketchup, but if it gets them to eat healthy food? I’ll take it! Hope you’re having a great week Alex!

    These look delicious! We are big ranch fans-like we buy ranch in the big containers at Sam’s Club and we also buy it as dry mix to mix with meat a lot (of course, it’s bought by the box!). Thank you for sharing :)
