So Chic Sushi Rolls

Serves: 4
Prep time: 10 minutes
Cook time: 0 minutes

4     whole Spinach sandwich wraps
1      cup Cooked white rice
1      cup Grilled chicken thinly sliced
½    cup Carrots thinly sliced
½    cup Red peppers thinly sliced
½    cup Alfalfa sprouts
½    Avocado sliced
Mayo or mustard (for sticking)

Cooking Instructions:

Lay out the wraps on your cutting board. Spread just a thin layer of mayo or mustard over the wrap to help everything stick.

Lay half of the rice down into the center of one of the wraps and press it out so it thinly covers the center of the wrap. Do the same for the second. Evenly distribute your chicken between the two wraps laying it in an even row over the rice. Be sure to keep it in a single line. Follow suit with your carrots, red pepper, sprouts and avocado. Now fold in the right section of your wrap over the ingredients and slightly pull then back toward you, then continue to roll over and make your self a tube.

Cut your tube into sushi roll looking slices. You can cut them straight or on an angle then arrange them on a plate. Serve these with edamame or even edamame chips! You’ll have your kids yelling Arigato.

My kids LOVE the sushi restaurant so this was a way for me to make them “sushi” at home (way cheaper by the way) and give them a special treat in their lunch boxes at school.

    Very healthy! I tried a similar recipe with hummus instead of mayo and whole grain rice instead of white.

    I know my kids will love these in their lunch boxes, but I’m going to make extra because I’ll eat them for lunch too! Great idea. You guys definitely need to be on TV!

    i found you on SITS. I am the first to admit I don’t cook much and will probably never make the “sushi” although they look delicious. But what a laugh watching you make them with the kids. The mayo eater had me crying I was laughing so hard and the random shots to Cooper, oblivious to it all…seemingly anyway.

    You really should you tube them if you don’t already.

    Oh my gosh what a wonderful idea! I can’t wait to make this and share this blog with my friends! Your boys are precious.
    I babysit my great niece (17 months) everyday and she is a bit finicky about what she eats. Her parents are very into healthy eating and organic…and the baby is like..”um yeah right” I am certain she will love this and so will her parents. I am making your blog one of my favorites!

    Yum,this inspired me to make my own variation. It was terrific last night – next time I’ll make it in the morning, it didn’t do too well over night;-( I think I’ll just bring my fav ingredients to work and make it on the spot! I used spinache artichoke hummas and WOW it was great. I forgot about the rice. . . I like that you can do SO many variations! I can’t wait to see all your other recipies!
