| Serves: 4 Prep time: 10 minutes Cook time: 0 minutes 4 whole Spinach sandwich wraps Cooking Instructions: Lay out the wraps on your cutting board. Spread just a thin layer of mayo or mustard over the wrap to help everything stick. Lay half of the rice down into the center of one of the wraps and press it out so it thinly covers the center of the wrap. Do the same for the second. Evenly distribute your chicken between the two wraps laying it in an even row over the rice. Be sure to keep it in a single line. Follow suit with your carrots, red pepper, sprouts and avocado. Now fold in the right section of your wrap over the ingredients and slightly pull then back toward you, then continue to roll over and make your self a tube. Cut your tube into sushi roll looking slices. You can cut them straight or on an angle then arrange them on a plate. Serve these with edamame or even edamame chips! You’ll have your kids yelling Arigato. My kids LOVE the sushi restaurant so this was a way for me to make them “sushi” at home (way cheaper by the way) and give them a special treat in their lunch boxes at school. |

Very healthy! I tried a similar recipe with hummus instead of mayo and whole grain rice instead of white.
These are delicious if I do say so myself. I just made them AGAIN for lunch!
I know my kids will love these in their lunch boxes, but I’m going to make extra because I’ll eat them for lunch too! Great idea. You guys definitely need to be on TV!
i found you on SITS. I am the first to admit I don’t cook much and will probably never make the “sushi” although they look delicious. But what a laugh watching you make them with the kids. The mayo eater had me crying I was laughing so hard and the random shots to Cooper, oblivious to it all…seemingly anyway.
You really should you tube them if you don’t already.
Following you on twiiter now
I love love love this recipe. Im adding this website to my favs. I love how there is video tutorials too since Im a visual learner. Thanks for visiting me today at my blog.
So good, I love this!
Thanks for the great idea!
Wow! What a yummy recipe! Stopping by from SITS! Have a wonderful Christmas!
I’m not a fish fan – but this sushi sounds yummo!! Merry Christmas!
That looks so good! And your kids are adorable! I was cracking up when the kid kept eating the mayo! Eww! He finally started eating a carrot, so that’s good! *lol* Thank you for sharing! I am going to have to check back often and see what other ideas you have.
LOL your kids are so cute!
Thanks for sharing.
Merry SITSmas from Cairo!
The video is hilarious *L* I don’t like the seaweed wrap around normal sushi, so this is a fabulous idea!
I really enjoyed your video. I still don’t think I am ready for sushi.
Merry SITSmas!
YUM!!! This looks GREAT! Stopping by from SITS!
Looks yummy but I don’t eat sushi or fish of any kind.
Stopping by from SITS. Have a great holiday
I should try this out =D
Merry Christmas ~
Coming from the SITS
Yummy – I’m thinking I gotta try this – thanks for sharing SITSta!
I don’t have kids, but I would be so curious to see if I could get my nephew to try this!
Oh my gosh what a wonderful idea! I can’t wait to make this and share this blog with my friends! Your boys are precious.
I babysit my great niece (17 months) everyday and she is a bit finicky about what she eats. Her parents are very into healthy eating and organic…and the baby is like..”um yeah right” I am certain she will love this and so will her parents. I am making your blog one of my favorites!
Stopping by from SITS. My son loves sushi, it’s one of the first thing he gets when we go to a Chinese food resraunt. Thanks for sharing this simple idea for sushi, I think I might even eat this kind of sushi!
This is a great idea that I will try. I think when the kids make it themselves they will try it and probably like it. Your kids are cute. Kathi
Sounds like something I’d actually eat (except the avacado!) When I saw sushi I almost didn’t read it because I don’t like sushi!
Stopping in from sits
Yum,this inspired me to make my own variation. It was terrific last night – next time I’ll make it in the morning, it didn’t do too well over night;-( I think I’ll just bring my fav ingredients to work and make it on the spot! I used spinache artichoke hummas and WOW it was great. I forgot about the rice. . . I like that you can do SO many variations! I can’t wait to see all your other recipies!
What a great idea to spice up lunch! I might have to make this for my hubby’s lunch. I think the only thing I would change is brown rice instead of white and vegan cream cheese instead of mayo.
I like this idea…I would have to call it something else..my son freaks at the word sushi…whatever!
My hubby and I just watched this together and think you are awesome!! He thinks you should be sending videos to The Food Network. As the mom of 5 (not so small anymore) boys, I know meals are challenging. Keep up the good work.
This is such a great recipe! I am sure my kids would love it!
Yum!!! I want one now. What a “chic” idea
Sounds yummy and fun. Now, if I could only get them to eat real sushi . . . I’d be in business!
LOVED this! Can’t wait to try it with my kids.
Actually if you add a little vinegar and a pinch of sugar to the rice, it *is* sushi! Sushi just means vinegared rice.
Temaki-sushi is another good one to make with kids – you just bring all the ingredients to the table, and everyone makes cones of nori seaweed and fill them with rice and whatever else they want. Things like thin strips of omelette, ham, and salad veggies are good to make temaki with.
Great video!!!!! Good job!!!! Happy SITS day!
That looks really good! Princess Nagger and I aren’t avocado fans, either, so Keegan’s not alone!
Sounds delicious! Stopping by from SITS.
Cute idea. I don’t like sushi myself but this I may try.
Stopping by from SITS. This was awesome! You seem like a FANTASTIC mom!
This is so fantastic! The idea is great, but I also love your family! Having the boys help in the kitchen is such a good idea- they seem to really enjoy it, (especially the mayo), and you can tell they’re learning something. Way to go! I’m here for your SITS day, and now I’m following…I will be back again and again!
Ah that was cute and fun to watch.
That is so cool first off that your kids love sushi. I hope my future kids do too because it’s my favorite!! I’m going to have to try this recipe at home.
Those look both awesome and delicious. I will try these with my kids… I just won’t hold my breath. My kids don’t tend to like their food mixed together.
happy FB day today! Glad to check your site out!
That sounds and looks delicious! I’m adding it to my favorite recipe file!
Happy SITS Day!
Cheers

YUM. And I already love sushi! Vistiing from SITS. Thanks. I’ll be back for sure.
HAPPY SITS DAY!!!
Can I just say that is AWESOME!!! I would have never thought about Sushi that way. My 12yr old son HATES sushi but I think he will eat this because it just looks like sushi. And it totally made my mouth water!!!
MMMM I am going to try this one. I think my daughter might eat it. Happy SITS day!
I will sure have to try these out. Glad you have a viedo
Brilliant idea! I agree with the commentor above who said you should send videos to Food Network. You totally should! Imagine how much easier you’d make the lives of millions of moms and dads!!
Happy SITS day! Those sushi rolls look yummy! I don’t cook at school but I’ll be home toward the end of May, and I normally cook for the family once a week (at least). I want to make those for us.
Sadly, though, my brother Josh won’t eat them unless I can convince him that they’re pizza.
Everyone else will love them.
Wow, so inventive! I can’t wait to try this with my picky eaters.
Happy SITS day!
You are so stinking creative! I love this idea! I will totally have to try it!
Happy SITS day!
Darn, have dial up so it takes forever and a day to watch videos.
