  1. I have a simple dip that everyone asks for when I get invited to a party :)

    Creamy Pesto Dip
    Ingredients:
    1/2 cup mayonnaise
    1/2 cup sour cream
    1/3 cup pesto
    2 teaspoons lemon juice

    Direction:
    Mix all ingredients together in a small bowl. Cover and refrigerator for at least 2 hours. Serve with pita chips, baby carrots, peppers, or whatever vegetables/chips you choose! Enjoy!

  2. Here’s one that I stole from my mom….er…I mean borrowed from my mom :)

    Crab Delights
    Ingredients:
    1.5 oz jar Old English Cheese Spread
    1 stick (1/2 cup) butter or margarine, softened
    1 Tablespoon mayonnaise
    garlic powder to taste
    1 6oz can crabmeat
    1 pkg English muffins, halved

    Directions:
    Mix all ingredients except for the English muffins. Place English muffin halves onto a cookie sheet. Spread the crab mixture evenly on all halves. Place under broiler until golden and bubbly. Cut into quarters.

    If you think you have more than you’ll eat, before broiling them, you can throw them onto another cookie sheet and freeze. Once frozen, you can put into a freezer bag and store in freezer for up to 3 months. When ready to use, place on cookie sheet and under the broiler as instructed. You can thaw them at room temperature or just throw them directly into the oven frozen. Enjoy!

    Pulled Pork Quesadillas
    Ingredients:

    4 (10-inch) flour tortillas
    1-2 cups pulled pork
    1-2 cups shredded cheese – depends on how cheesy you want it (I used a colby-jack blend)
    1 roasted jalapeno, seeded and diced
    1 tomato, seeded and diced
    1 avocado, peeled and pit removed
    lime juice
    salt and pepper

    Directions:
    In a small bowl, smash the avocado up just a bit, add a little lime juice, salt, and pepper. Stir to combine and set aside.

    To assemble your quesadillas: Lay out the pulled pork evenly between two tortillas. Layer the cheese over it, then the jalapenos, and then the tomatoes. Spread the avocado mixture on one side of the other two tortillas and lay them on top of the others, pressing down a little to seal everything in.

    Place the prepared quesadillas directly on a preheated grill (low) and let cook for 1-2 minutes. Flip them over and continue to cook until the outsides are crispy and the cheese has melted. Remove from grill, cut into half or 4th’s, and enjoy!!

  5. Fun! I LOVE football and I LOVE the Superbowl. When I was married we always hosted a big party… now my TV is far too old and not flat or HD so we have to go somewhere where the electronics are better!

    I’ve got a recipe I’ll email… I should do it this week, because I have a feeling we will be on opposite sides of the fence come Sunday afternoon and maybe I won’t be speaking to you next week :)

  6. Cucumber yogurt dip

    18oz. plain greek yogurt(I use non-fat)

    2-3 cloves garlic crushed

    a cup of chopped, seeded, peeled cucumber

    fresh torn mint leaves
    salt and pepper
    mix all ingredients and serve with pita chips and veggies

  8. Ok Alex…..here’s the long awaited Chicken Enchilada Dip that I promised you months ago. This is always in my house on Super Bowl Sunday and any other time we have football parties. Enjoy!

    Chicken Enchilada Dip

    1 pound skinless, boneless chicken breast
    1 packet Taco Bell Taco Seasoning
    1 (8 ounce) package cream cheese, softened
    ½ cup mayonnaise
    ½ cup sour cream
    2 cups shredded Cheddar cheese
    1 (4 ounce) can diced green chile peppers

    Preheat oven to 350 degrees. Sprinkle chicken breast with taco seasoning and place on a lined baking sheet. Bake 20 minutes or until it is no longer pink. Cool and shred.

    Place shredded chicken in a medium bowl. Add cream cheese, mayonnaise, sour cream, ½ of the cheddar cheese and drained green chile peppers and mix well. Place in a baking dish and cover. Bake in preheated oven for 30 minutes or until hot and bubbly. Remove the cover and add the remaining cheese. Put back in the oven to melt cheese. Serve hot with tortilla chips.

    Note: Sometimes I mix the cheese up in this recipe. I’ve used Monterey Jack, Pepper Jack, Sharp, Colby and/or a combination of the cheeses. It depends on what I have at the time or whatever I feel like using. There’s no wrong combination so have fun with it. I have also used jalapeno peppers instead of the green chiles. That gives it more heat and a little different flavor. It’s strictly whatever you prefer.

    To die for potatoe skins! Each potato will make two skins and everyone wants at least two!

    12 small russet potatoes (oiled & salted on the outside) baked for 50-55 minutes in a 350 oven. Once cooled, cut in half and scoop out insides, but leave 1/4 inch in shell. Put one half of the potatoes in a container in the fridge and save for future mashed potatoes. The remaining half needs to be mixed with 8 oz softened cream cheese, one half grated sweet onion, salt & pepper, 3/4 # of fried, drained and chopped bacon and 1/2 cup chopped mushrooms that have been sauted in the bacon grease. After thoroughly mixing the cream cheese mixture, stuff the potato shells and sprinkle paprika on top. Set in the top rack of the oven for about ten minutes. These are delicious and filling. Bet ya can’t eat just one!

    Okay now this is a family favorite before you all say Yuck.. Try it first..

    Touchdowners:

    cut up a can of Spam into cubes
    Cut up 4 oz of Velvetta
    Relish (2 Tablespoons)
    Mustard (2 Tablespoons)

    Mix the above in a bowl.. Put on Hamburger Buns and wrap in Aluminium Foil, Put in an oven at 350 degrees and cook for about 10 – 15 min..

    This is the most amazing sandwich and my Kids and I always scream “Touchdown” when we eat it!!

    So This is the perfect Football Food

  18. Crispy Fried Wonton Pizza Bites (serves 8 )

    Super Bowl – another of those fantastic eating holidays that we missed out on for years through ignorance and being British. We first discovered the party when we were living in Warsaw Poland. Some ex-pat American friends invited us to join them at a local sports bar at 1 in the morning to eat burgers and watch the game. It was the most riotously joyful midnight feast I’ve ever been to. Plus I won $50 by picking a random name in the first touchdown sweepstakes.

    Burgers, beer and betting when we ought to be tucked up in bed? For a girl who was brought up Methodist, it was all too seductive for words.

    These wonton pizza bites taste fried, but are actually baked, which keeps the kitchen smelling good, and makes life much easier if you’re feeding a crowd. They can be made a day or two in advance and heated up on Game Night.

    30 wonton wrappers (I’m guesstimating 3 or 4 per person)
    2 large balls of mozzarella cheese
    8 – 10 tbsp marinara sauce (shop bought is fine)
    30 small slices of salami
    1 egg
    Vegetable oil

    * Pre heat the oven to 400
    * Spoon a blob of marinara sauce into the center of the wonton.
    * Top with a cube of cheese and a slice of salami
    *Crack the egg, and give it a quick whisk.
    * Use a pastry brush (or your fingers) to dab a layer of egg around the edges of the wonton wrapper, then fold over into a triangle (try to seal out air pockets)
    * Repeat for the rest of the wontons
    * Brush both sides of each wonton with vegetable oil and place on a baking tray
    *Bake for about 10 – 15 minutes until the parcels are golden and crispy – keep an eye on them
    * Season with salt and pepper then serve
    They can be made in advance and warmed through in a low oven to re-heat, or forzen, then baked from frozen (15 – 17 mins)

    If You Can Make That You Can Make This:

    Switch out the salami for pineapple chunks and sliced ham
    Or mushrooms and a drop of truffle oil
    Or chopped black olives
    Switch out the mozzarella for goat cheese
    Or Cheddar
    Replace the tomato sauce with pesto and add chopped cherry tomatoes and mozzarella
    Or pine nuts, goat cheese and black olives

    SUPERBOWL SUBMARINE SANDWICH
    (feeds about 8 people)

    Ingredients:
    1 loaf French bread (halved lengthwise)
    4 tablespoons butter (softened)
    3 garlic cloves (minced)
    1 cup grated parmesan cheese
    1 teaspoon dried oregano
    1lb sliced ham
    1lb sliced turkey
    1lb sliced salami
    1lb sliced mozzarella cheese
    1lb sliced Swiss cheese
    1lb sliced provolone cheese
    2 cups lettuce (shredded)
    2 tomatoes (sliced)
    1 red onion (thinly sliced)
    1 (10 ounce) can black olives (drained)
    1 (4 ounce) can sliced mushrooms (drained)
    1 green bell pepper (thinly sliced)
    1 cup banana pepper (sliced)

    Cooking:
    Step 1: Pre-heat the oven to 425 degrees. In a small bowl mix together garlic and butter until smooth. Spread the garlic butter onto the split bread halves, sprinkle with parmesan cheese and oregano, and place onto a baking sheet. Bake at 425 degrees until the cheese is lightly golden. Remove from the oven.
    Step 2: Lay out the bottom half of the French bread and layer with cheeses and meats. Top with lettuce, tomatoes, and olives. Next add onions, mushrooms, green pepper, and banana pepper. Top with the upper layer and press down gently.
    (Makes 8 Servings)

  20. Here is my superbowl recipe.

    Healthy n Crunchy Cold Eggplant Casserole

    20 whole wheat digestive biscuits
    2 tablespoons butter
    2 tablespoons red chili sauce
    3 white or brown bread slices
    3 medium sized thinly sliced eggplants
    2 cups plain or skimmed yogurt
    pinch of thyme

    Cut the bread into small squares.Drizzle some chili sauce over the eggplant slices and bread squares. Grill the eggplant and bread on a lightly greased grill pan or roast them in a preheated oven at 450 degrees F for 10 to 15 minutes or until the bread crisps and eggplant slices are soft and tender. Remember to flip the eggplant slices after they are halfway done.Finely grind the biscuits in a food processor with some butter. Spread a thick layer of the crushed biscuit mixture on a greased casserole dish.Spread a layer of plain yogurt over the crushed biscuits .Place cooked eggplant slices on top and refrigerate the eggplant casserole for 10 to 15 minutes .Lastly,sprinkle some thyme and add the toasted bread squares on top.

  21. Golden Chili Potato Dollops

    200 grams plain potato chips
    100 grams coarsely chopped cottage cheese
    2 tablespoons red chili sauce
    6 tablespoons orange juice (any kind)
    4 tablespoons grated mozzarella cheese (optional)
    2 tablespoons sesame seeds (optional)

    Preheat oven to 450 degrees F. In a food processor,finely grind the potato chips and cottage cheese with enough orange juice to form a thick paste. With a spoon, drop dollops of the potato mixture onto a greased oven tray.Spread sesame seeds with grated mozzarella cheese on top of the dollops.Drizzle some chili sauce on top and bake in the preheated oven for 10 to 15 minutes or until the potato dollops turn crisp.

    Yummilicious hawaiian smoked sausage bread

    1 loaf of french bread
    1 cup sliced smoked chicken sausages
    4 tablespoons pineapple chunks
    2 tablespoons pineapple juice
    4 tablespoons tomato paste
    A pinch of oregano

    Preheat oven at 400 degrees F.Slice up the loaf diagonally into 1 inch thick slices. Drizzle pineapple juice over the sliced bread.In a mixing bowl,mix smoked chicken sausage slices with pineapple chunks and tomato paste. Spread the mixture onto the bread slices. Sprinkle oregano on top and bake in the preheated oven for 10 to 15 minutes or until the bread turns crisp.

    Lemon Teriyaki Steak Tartlets

    1 round steak
    2 tablespoons soy sauce
    1 tablespoon brown sugar
    1 teaspoon lemon juice
    1 chopped garlic clove
    1 packet prepared pastry shells
    1 can of cherry tomatoes
    3 tablespoons roasted sesame seeds or peanuts (optional)

    Preheat oven at 450 degrees F. Marinate beef steak with soy sauce,brown sugar,garlic clove and lemon juice.Place your steak on a greased oven tray and bake in the preheated oven for 10 to 18 minutes or until the steak is tender.Cut the cooked steak into thin slices.Fill the pastry shells with cherry tomatoes and beef slices.Drizzle some remaining marinade or drop a dollop of sour cream on top.Sprinke roasted peanuts or sesame seeds on top and serve hot.
