Ode to the Sunset Grill – Chunky Chicken Nachos

Back in the olden days when I was just a young pup of about 19, I landed my first waitressing gig.

It was at a great little place in Boston called the Sunset Grill & Tap.

They were famous for their hamburgers…

their beer (this was back before the whole microbrew craze and we were famous for having over 100 beers on tap and over 400 more in bottles – oh and being only 19 I didn’t know what any of them tasted like, of course, no really…)

and their NACHOS!

The nachos…oh the nachos…the nachos were amazing…

First off, the nachos are enormous! I mean huge. 4 college football players would have issues finishing the plate.

And they were topped with yummy goodness…

Cheddar Cheese, Salsa, Ground Beef, Tomatoes, Sour Cream, Lettuce, Olives, all on top of tri color corn chip delight.

That’s me and Keegan on that same visit to Sunset, and yes, I’m enjoying one of those beers I never got to try…just go with me on this one.

So I was in Boston last weekend and didn’t make it to the Sunset for my favorite nachos so I decided to whip up a plate of these at home. I made mine out of ground chicken to lighten things up a bit, well as much as you can lighten up nachos that is…Let me first apologize for these pics. I broke my camera so I had to take these with my iPhone…The pics may be slightly sad but the nachos were awesome.  I though the hubs was going to cry…he may have shed a tear he liked them so much.

Serves 6 Prep Time: 10 minutes Cook Time: 15 minutes

1 lb ground chicken

1 packet taco mix

3/4 cup water

large bag of tortilla chips

2 cups of cheddar cheese

1 tomato chopped

1 small red onion chopped

1 avacado chopped

4 T chopped cilantro

1 head of iceberg lettuce, sliced

chopped olives

sour cream

sliced jalapenos

Preheat your oven’s broiler.  In a large skillet brown your chicken over medium high heat.  When it’s cooked through season with taco mix and 3/4 cup water.  Cook for an additional 5 minutes.  Place a single layer of tortilla chips on a baking sheet.  Sprinkle with half of your cheese.  Place under the broiler for 3 minutes.  Remove from oven and top with more chips, chicken mixture and remaining cheese.  Place back under the broiler for another 5 minutes. appetizers   Ode to the Sunset Grill   Chunky Chicken Nachos

Remove from oven and transfer to a serving dish.  Top with lettuce, tomato, olives, avacado, cilantro, onions, jalapeno, and sour cream.  Serve ‘em up hot and gooey!  I like to add tobasco to mine too.

Pantry Party – Krabby Patties

How do I get my kids to eat seafood?  I tell them it’s Sponge Bob seafood!  Krabby Patties (otherwise known as I didn’t want to spend money at the store so how can I use up stuff in my pantry like this canned crab meat.)  Viola.  Dinner is served, Spongebob Style…

Serves 4  Prep Time: 10 minutes Cook time: 25 minutes

3 6oz. cans lump crab meat

2 eggs

1 t Worcestershire sauce

1 t Colemans dry mustard

1/4 c mayonnaise

juice of one lemon

1 clove garlic minced

2 T fresh parsley minced

2 T melted butter

1 T old bay seasoning

1  c panko breadcrumbs

S&P

2 T olive oil, divided

1 T butter, divided

Grab a big bowl and combine breadcrumbs, old bay, melted butter, parsley, garlic, lemon juice, mayonnaise, dry mustard, worcestshire sauce, eggs.  Mix well to combine.  Season with S&P.  Open and drain your crab and carefully fold into your mixture trying not to break up crab too much. Form into patties and place on a plate.  Put the plate into your fridge and allow the patties to set for 30 minutes to an hour.

appetizers   Pantry Party – Krabby PattiesWhile your patties are finished setting up, preheat your oven to 375 degrees.  Set a large skillet over medium high heat.  Add 1 T olive  and 1/2 T butter to pan and allow to heat up.  Add the patties in batches and allow to brown on each side, about 3-4 minutes.  Replace your oil and butter halfway through if necessary.  Place the browned patties on a cookie sheet and place in oven for 10-15 minutes.  Serve as an appetizer or on top of a salad as a great summertime meal.

Serves: 6  Prep Time:  1 hour  Cook Time: 20 minutes

8 bacon strips, diced

1 cup onion, chopped

1 16 ounce can sauerkraut, rinsed and drained well

1/2 pound kielbasa, roughly chopped

2 T brown sugar

1/2 t salt

1/2 t pepper

1/4 t caraway seeds

1 16 ounce package hot roll mix

2 eggs, divided

1 cup hot water

2 T butter, softened

appetizers   Sausage surprise bundles Preheat oven to 350 degrees.  In a large skillet heat your bacon over medium high heat until crisp.  Remove with slotted spoon to a paper towel.  Set aside.  Add onion to the bacon drippings and cook until soft, about 6-7 minutes.  Stir in sauerkraut, kielbasa, brown sugar, garlic salt, caraway seeds, and S&P.  Cook and stir for 5 minutes.  Remove from heat and allow to cool. appetizers   Sausage surprise bundles

While that is cooling, get started on your rolls.  In a bowl, combine contents of hot roll mix.  Stir in one egg, water, and butter to form a soft dough.  Turn out onto a floured surface.  Knead until smooth and elastic, about 5 minutes.  Cover dough with a large bowl and let it rest for 5 more minutes.

appetizers   Sausage surprise bundles Divide dough into 16 equal pieces.  On a floured surface, roll out each piece into a 4 inch circle.  Top each circle with 1/4 cup filling.  Fold dough, forming a ball; pinch edges to seal.  place seam side down on a greased baking sheet.  Cover loosely with plastic wrap and allow to rise in a warm place for 15 minutes.  appetizers   Sausage surprise bundles

Beat remaining egg.  Brush over bundles and sprinkle with poppy seeds, salt, and garlic powder.  Bake at 350 degrees for 17-20 minutes or until golden brown.  Serve with soup or salad.  YUMMMMMMMY!!!!
