Baseball Week – Sloppy Joe Dimaggios

This is one of my favorite of Rachael Ray’s quick meals with a couple of tweaks due to my massive recipe OCD condition.

It’s perfect for Baseball Week!

Make this for your little sluggers and the whole team’ll be over to eat!

Serves: 9 little leaguers  Prep time:  10 minutes  Cook time:  20 minutes

WHAT YOU NEED:

1 T olive oil

2 lbs ground sirloin

1 package hebrew national hot dogs, sliced

1 onion chopped

1 garlic clove chopped

1 T steak seasoning

1 T chili powder

3 T brown sugar

3 T worcestershire sauce

3 T dark beer, like Guinness

1 8 ounce can tomato sauce

    WHAT TO DO:

    Heat the extra-virgin olive oil in a deep skillet over medium-high heat.

    Add meat and crumble as it browns.

    Add chopped hot dogs after 3 to 4 minutes then cook 3 to 4 minutes more.

    Add the onions and garlic to the pan and cook to soften, 5 to 6 minutes more.

    In a bowl mix the spices, sugar, Worcestershire, Guinness and tomato sauce.

    Pour sauce over the meat and simmer a few minutes to combine flavors.

    Slop onto buns and serve.


    Cowboy Up Burgers

    Ok seriously…what is up with all the gloomy weather here in the Northeast?  I feel like I haven’t seen the sun for more than a 5 minutes stint in almost 2 weeks.  Where the heck did we move?  Seattle?  So what do I do when I get depressed and need a little summer lovin’?  Crack open the coronas and fire up the grill.  You all know how I love to get my burger on so I whipped up some Cowboy Burgers, or Cowboy Up Burgers as we in Red Sox Nation like to refer to them…

    There are opposite sides taken in the battle of the burger wars.  It’s sort of like Color War Week at camp.  There are those who believe you should only gussy up what goes on top of the burger, and those who believe you should work on the actual burger itself.  I’m sort of split.  So for this one, I did both.  I dress up the burger’s interior and toss some good stuff on top.  I like it when the burger is flavored through and through, but then I felt like it looked a little naked there on the bun so I felt bad for him and slapped on some grilled onions and mushrooms….the choice is yours, but what makes this a cowboy burger is what is on the inside.  Take a looksie…

    2 lbs ground beef, 85/15

    4 slices bacon, cooked and crumbled

    1 jalapeno, seeded and diced

    1/4 large red onion diced

    2 T worcestshire sauce

    1 clove garlic finely chopped

    1 big T montreal steak seasoning

    1/4 cup beer

    3/4 cup shredded sharp cheddar cheese

    Combine all your ingredients into a large bowl.  Toss to combine with your hands just enough to incorporate all the burgers.  Form patties, I usually get about 6 big burgers.  Sprinkle with some olive oil and grill to desired doneness.  We like ‘em medium-rare to medium.  The nice thing about these burgers is that the all the ingredients help to keep them nice and moist so even if you leave them on the grill a little longer they are still nice and juicy!  We just had friends over to BBQ, uh in the rain mind you, and they said these were the best grilled burgers they’d ever had.  Yes they are!  Giddy up, Cowboys!

    Philly Steak N’ Cheeseburgers

    I know, I know you’ve been waiting for all the BBQ recipes from Brady’s birthday party.  Well I can tell you about them, but Ma drank a bit too much vino and forgot to actually take pictures of the food.  So, you’ll just have to trust me when I say the burgers and dogs were great.  The chicken wings and steak tips went really quick and the New England Steamers were amazing.  So now I have all these leftover and what’s a girl to do?  Well I grabbed some prepared burger patties (I know, oh the horror) and sprinkled them with steak seasoning, grilled ‘em up and dressed them to look like a Philly Steak and Cheese Sub.  This ain’t your average leftover burger!

    Serves: 6  Prep Time: 20 minutes  Cook Time: 15 minutes

    6 burger patties

    2 T steak seasoning

    1 onion sliced thin

    1 bell pepper sliced thin

    2 T olive oil

    2 T butter

    2 T flour

    1 1/2 cup milk

    1/2 cup cheddar cheese

    1/2 t ground nutmeg

    S&P

    6 sub rolls

    Turn on your grill and heat it to medium high to grill your burgers.  Let the meat sit on the counter for about 10 minutes before you put them on the grill.  Sprinkle with steak seasoning and drizzle with a bit of olive oil.  Grill to desired doneness.  Let rest under some tin foil for about 5 minutes.  Meanwhile heat 1 large skillet and a medium saucepan over medium high heat .  Add 1 1/2 T olive oil to the skillet and 2 T butter to the saucepan.  When the skillet is hot add your onions and peppers.  Season with steak seasoning and allow to saute for about 10 minutes or so, until nice and soft.  Once the butter has melted in your saucepan, whisk in your flour.  Cook for about 1 minute.  Slowly stir in your milk whisking constantly.  Bring to a boil then roll the heat back to about medium low and allow it to simmer for 5 minutes.  Season with S&P and grated nutmeg.  Stir in your cheese and allow to simmer on low until your burgers are ready to go.

    dinner   Philly Steak N’ CheeseburgersSplit a sub roll in half, toast if desired.  Top with burger, pile on your onion and peppers, then slather on your cheese mixture.  Philly Cheese burger style!  I ran out of buns, so the hubs had to settle for a bulkie roll…sorry babe.

    Brewhouse Burgers

    Serves: 6  Prep Time:  10 minutes  Cook Time:  20 minutes

    2 pounds ground beef

    1/ 2 bottled beer

    1 large shallot, minced

    2 T  grill seasoning

    1/2 cup shredded Cheddar

    8 slices bacon cooked and crumbled

    garlic powder

    S&P

    Romaine lettuce

    hamburger rolls, toasted

    dinner   Brewhouse  BurgersIn a large bowl mix together the ground beef, beer, shallot and grill seasoning until well incorporated. Shape the beef into 6 equal portions and flatten each portion. Place and equal amount of cheese and bacon in the center of each and wrap the edges around the yummy stuffing to form a ball. Flatten each ball into patties.  Sprinkle the tops of each burger with garlic powder and S&P.

    Set up grill (or indoor grill pan) to medium-high heat. Place patties on the hot grill and cook 5-6 minutes per side for medium. Serve over lettuce on toasted buns with your favorite burger toppings.
