Apple of my eye

Ok, it’s the last day of my apple week here.

I picked out a yummy dessert recipe for ya.

No it’s not apple pie

or apple crisp

or caramel apples

It’s simple delicious and healthy enough to have as an after school snack.

How do you like these apples???

Ok, first let me apologize for the terrible picture…

See my camera seems to (have been stolen by a little Fitzpatrick boy who won’t cough up it’s whereabouts) walked off on its own so I had to use my iPhone to take this sucker.  It may not be the prettiest shot but it sure was delish!!

1 apple, sliced

2 ounces crumbled good quality blue cheese

1 T honey

Lay your apples on a plate.  Crumble blue cheese over the apples.  Drizzle with honey.  Devour.

You could also do this with pears.  I love it with fresh summer berries.  Give it a try.  Trust me.  You may give up chocolate cake!

Farmers Market Strawberry Rhubarb Pie

So you all know that I went berry picking with the kiddos.  They had a blast and can’t wait for fruits Farmers Market Strawberry Rhubarb Piethe berry seasons, apple seasons, corn seasons, etc that are upcoming.  But to go with my farm fresh strawberries we went on down to the old town farmer’s market.  I was so excited.  Our town’s first farmer’s market of the season…fruits Farmers Market Strawberry Rhubarb Pie

Well to say that I was disappointed is an understatement.  I know it’s not a huge town but it apparantly boasts quite a number of farms here and to see three tiny little stalls was, well, heartbreaking.  So I picked up some rhubarb to couple with my berries and some dandelion leaves that you’ll be seeing in a yummy recipe or two upcoming and went home dejected.

Welcome to the small town I guess.  Not like back in LA.  Apparantly there are a boat load of bigger ones around.  We’ll have to check those out…soon!  I did make a yummy pie though.  Check it out.

For the pie crust:

1 cup butter (2 sticks), cubed and chilled + 2 T cut into small pieces

2 1/2 cups all-purpose flour plus more for dusting

1 t salt

3 T sugar

8 to 12 tablespoons ice water

2 T cream

1 T sugar in the raw

Preheat oven to 400 degrees F.  Put 2 sticks of butter, flour, salt and sugar in the food processor, and pulse lightly just until the mixture resembles wet sand. Add the water, 1 tablespoon at a time, pulsing briefly after each spoonful of water. Keep adding water until the dough just begins to gather into larger clumps. Transfer dough onto counter and split into two equal portions. Wrap each of them separately in plastic wrap and allow to chill in fridge for at least 30 minutes.  You can do this the day before if you want.

Remove 1 portion from the fridge to a flour coated surface. Using a rolling pin, roll the dough out to a 10-inch round. Gently fit the rolled dough into a 9-inch pie pan, and refrigerate while you prepare the pie ingredients.  fruits Farmers Market Strawberry Rhubarb Pie

For the filling:

3 1/2 cups rhubarb sliced

1 16 oz container strawberries hulled &  halved

1/2 cup (packed) golden brown sugar

1/2 cup sugar

1/4 cup cornstarch

1 t ground cinnamon

1 t vanilla extract

1/2 t nutmeg

1/4 t salt

Combine all the ingredients in a bowl and mix to coat well.  Set aside.

fruits Farmers Market Strawberry Rhubarb PiePull the first crust in the pie plate out of the fridge and fill with berry mixture.  Top with remaining cut up butter.  Top with rolled out second pie crust and crimp edges decoratively.  Cut a few slits into the top of your pie to allow the steam to escape.  Brush top dough with cream and sprinkle with sugar in the raw.  Place pie on a baking sheet and slide into your 400 degree oven.  Cook for 15 minutes then turn oven down to 350.  Cook for an additional 45-55 minutes, or until golden brown.

Serve warm with whip cream or ice cream.  So so good!!

My Kid Likes Fruit? Cobbler

We’re on our way to go berry picking today.  After moving to such a rural area we’re embracing our farmer neighbors and going out to get our berry on.  Ok, for the record, it’s hardly rural…but when you’ve lived in nothing but big cities, LA, NYC, and Boston, then move to a place where there’s only 4 or 5 streets in town you’re allowed to drive over 25 mph it’s a huge adjustment.  And my house is on an entire acre!  An ACRE!!!  You have any idea what this would cost in LA County????  I don’t even want to think about it.  Anyway, we’re off to pick strawberries today.  I think a strawberry rhubarb pie might be in order shortly but in the meantime you’ll have to check out my blueberry/peach cobbler.  It’s insane.  Yeah, I said it, INSANE!!!  I dare you to make it and not eat the whole thing in one sitting…

4 c                                    blueberries

4                                     peaches, peeled and sliced

2 sticks                        unsalted butter, divided

1 c                                    sugar, divided

2 T                                    corn starch

1 T                                    lemon juice

1 t                                    ground cinnamon

¾ t                                    salt, divided

1 ½ c                                    all purpose flour

2 T                                    baking powder

¾ c                                    heavy cream

1 whole                        egg

1 T                                    water

2 T                                    sugar in the raw

Preheat your oven to 375 degrees.  In a large pot melt 4 T butter.  Cut remaining butter into cubes and place in freezer.  Add blueberries, peaches, and ½ cup sugar to the melted butter.  Stir in corn starch, lemon juice, cinnamon, and ¼ t salt.  Mix well, and turn off heat.

In your food processor sift in flour, remaining sugar, baking powder, and remaining salt.  Pulse quickly to combine.  Add in butter from the freezer and pulse until the flour mixture looks like sand.  Pour in cream and pulse again quickly just until the dough comes together and is slightly sticky.

Beat your egg in a small bowl and add water.  Set aside.

Pour your fruit mixture into a 9×13 baking dish.  Drop the dough by spoonfuls onto the fruit mixture, spread it out as it will all cook together in the oven.  Brush the top of the batter with egg wash then sprinkle on sugar.

fruits My Kid Likes Fruit? CobblerPlace the pan on a baking sheet to catch “bubble over” and bake at 375 for 45 minutes or until golden brown.  Serve with ice cream or whip cream.  You kids are sure to love this fruit!

Meaty Morsel:  Switch up your fillings with this cobbler.  Try raspberry/nectarine or peach/apple, or mixed berry!  It’s always delicious and a big crowd pleaser.

I’m linking up today to meet some new Thursday friends.  If you’re new here, welcome.  Pull up a chair.  Can I get you a cup of coffee with your cobbler?

Sweet Healthy Summer Treats Shell Style

We’re still busy working away filming our television pilot so my girl, Shell, one of my favorite blogger on this planet, has graciously agreed to entertain you all in my absence.  Shell came all the way over from her own super busy blog Things I Cant Say to hang out with me today.  It’s kind of big deal.  I liken it to sitting at the popular kids table in the cafeteria.  I’m all aflutter.  I hope milk doesn’t come out of my nose…I think I might have to change my outfit.

I am convinced that Alex and I live parallel lives. Our boys, experiences that we’ve had, even our personalities.

But, she is the more gifted in the kitchen. Me, I steal her recipes and she lets me pass them off as my own.

So, when she asked me to guest post over here, I felt a little intimidated, though always willing to help my twin out.

She told me not to worry, that I didn’t have to try to fill her shoes…which is good, since I can’t!

But, I did start thinking of summer treats and memories from my childhood.

You see, we didn’t have any sugar growing up. None. Like, not even plain Cheerios because there was one gram of sugar per serving.

But, we still wanted treats, just like any other kids. We saw other kids with popsicles and we wanted some, too.

So, Mom made her own.

Either we had fruit juice ones- as simple as it sounds- pour 100% fruit juice into popsicle molds or for a treat, we had orange cream ones.

Not the ones that you are thinking of, with the orange outside and the ice cream in the middle- but these are a healthy alternative.

You’re not exactly going to fool your kids into thinking that these are the same as those yummy treats….but you might luck out and have them like them anyway!

Combine 16oz yogurt (plain or vanilla- though my mom made her own) and 6oz of frozen orange juice concentrate. Stir well, pour into Popsicle molds, freeze, and there ya go!

What do you think, Ma/my twin? Are you going to try this?

What are your healthy treats for summer?

Annie Bakes up Summertime Memories

So today we have guest post part deux…and you’re in for a treat.  A sweet ice cream treat with the fabulous and wonderful Anne at Annie Bakes.

She is adorable and I love her.  She’s always cooking up something fantastic for her along with her hubs and two sons.  I realize that I’m not being fair to all the wonderful mothers of daughters out there, wait’ll you see tomorrow’s guest post, but for now you’ll have to excuse the son-love.  If you’re new here, welcome, welcome, I apologize for being a poor host and dashing off.  The kids and I are off to shoot a television pilot based on our blog and cookbook and so the beautiful Anne will be here in my stead.  She’s a doll, I know you’ll all love her…

I am so thrilled that Alex asked me to be the Featured Blogger here at Ma, What’s For Dinner?  And since I’m spending the day, I thought I would bring dessert, cuz who doesn’t like dessert?!?  This recipe is super easy to whip up–in fact it wasn’t really a recipe, but just a few of my favorite ingredients thrown together.

But the best part is the toasted, salted pecans!!  We used to have a Dairy Queen and I LOVED their turtle sundaes and always asked for half of the chocolate and caramel, but double the pecans!  Mmmm, but now, sadly, we no longer have a Dairy Queen so I am left to my own devices when it comes to salted pecans.  If you’re a little weirded out by salt in your dessert, have no fear, that’s what makes the chocolate come alive!  It’s just like french fries and a chocolate shake…

Turtle Ice Cream Sandwiches

INGREDIENTS:

8-10 ice cream sandwiches

1- 8 ounce container lite cool-whip-thawed

caramel ice cream topping

chocolate ice cream topping

1/2 cup chopped pecans

2 tablespoons butter

1 teaspoon Kosher salt

DIRECTIONS:

In a saucepan, melt the butter over medium heat.  Add the pecans and toast, but do not burn for about 5 minutes.  Sprinkle with the Kosher salt and let cool completely.  Meanwhile, spray an 8 x 8 baking dish with a little cooking spray and line with Saran Wrap (this will allow you to pull the dessert out neatly to cut it when it is frozen).  Layer the bottom with ice cream sandwiches and cut some to fit if you need to.  Layer with cool-whip, drizzle with the caramel and chocolate and sprinkle on half the pecans.  Add another layer of ice cream sandwiches, and layer with cool whip.  Freeze for at least one hour.  Remove the dessert from the pan using the Saran wrap and cut into pieces.  On a dessert plate, drizzle chocolate sauce, set the dessert in the middle, then drizzle with caramel and top with the pecans.

I hope you all enjoyed this recipe!  Even though I’m spending the day here, I still welcome you to check out my blog www.anniebakes.net.

And Alex–Good luck, and I hope I didn’t make too much of a mess in your kitchen, I promise to clean up before you get home!  Anne
