Slow roasted pulled pork sandwiches

I love pulled pork.

Not only is it delicious…

But it’s cheap…

And I can use it for days!!!

Perfect for a summertime BBQ!

Pulled Pork Sangies

Serves: 10  Prep time: 15 minutes + 1 day  Cook time:  6 hours

For the dry rub:

3 T paprika

1 T garlic powder

3 T brown sugar

1 T dry mustard

3 T coarse salt

1 t liquid smoke

1 t dried oregano

¼ cup olive oil

For the Sandwiches:

1 (5 to 7 pound) pork roast, preferably shoulder or Boston butt

2 T prepared mustard

2 packages Hawaiian bread  rolls

2 cups BBQ sauce

recipes for kids kids lunch ideas kid favorite recipes featured dinner appetizers    Slow roasted pulled pork sandwichesIn a food processor combine the paprika, garlic power, brown sugar, dry mustard, salt, liquid smoke, and oregano.  Turn in the processor on and add in your olive oil until you have a nice paste.

Rub  your pork butt with the prepared mustard then slather on your spice mixture.  Be sure to massage it in well and get it into all the nooks and crannies.   Let in marinate in the fridge for as long as possible, at least 1 hour or up to overnight.

Place the marinated pork in a roasting rack and roast at 300 degrees until an instant read thermometer reads 170 degrees F, about 6 hours, when the pork just easily falls apart.

Serves: 8  Prep Time: 5 minutes  Cook time:  15 minutes

2 links polska kielbasa smoked sausage, sliced

1 cup maple syrup

1 T soy sauce

1/4 cup brown mustard

1 t liquid smoke (optional)

In a large skillet over medium high heat, warm sausage until the sides just begin to crisp, about 5 minutes.  Pour in your syrup and soy sauce and stir well.  Add in mustard and liquid smoke and mix well.  Bring to a boil then knock back the heat and let simmer until sauce is thick and rich and bubbly.

Pour onto serving platter and serve with toothpicks.

Score!

Superbowl Countdown – Pancake Popcorn Chicken

These are a huge hit for big and little kids.

Make a bunch of varying degrees of hot and they’ll disappear off the plate by halftime!

WHAT YOU NEED:

2 cups complete pancake mix

1 1/4 cups water

1/2 cup flour

S&P

Hot sauce

1/4 cup buttermilk

1 1/2 pounds of chicken cut into bite size chunks

Veggie or Canola oil for frying

WHAT TO DO:

In a large pot heat 2 inches of oil over medium heat.  While the temp comes up to 350 degrees (you can use a candy thermometer to measure) get your batter ready.

In a large bowl combine pancake batter, water, and a few dashes of hot sauce.  Mix well.  In another bowl add flour, then another bowl add butter milk.  Make an assembly line with the buttermilk first, then the flour, then the pancake mix.  Working in batches, near your oil, begin the coating process.  Dip the chicken into the buttermilk, shake off excess, then the flour, shake off excess, then the pancake mix, and into the oil.  Try to add only enough to keep the temp at 350 degrees.

Once the chicken starts to brown on one side, flip it over to the other.  It should take about 2-3 minutes per side.  Once browned remove from oil and drain on paper towels.

Serve some as is, with ranch dressing.

Toss some in more hot sauce.

I tossed some with my favorite Wild Wings Asian Zest sauce.

Serve with blue cheese and celery!

Sloppy Joe DiMaggio’s A La Rachael Ray

I saw her whip this up on TV not too long ago and it’s so much fun.  I make a version of this but I decided to pay hommage to Rachael straight up.   I loved it, but the kids like my turkey burger version better.  Aren’t they good boys???  Next time I’ll post my sloppy doggies version and you can decide!

Serves: 9 little leaguers  Prep time:  10 minutes  Cook time:  20 minutes

  • 1 tablespoon extra-virgin olive oil
  • 2 pounds lean ground sirloin or ground turkey
  • 1 packages beef or pork hot dogs, sliced 1/2-inch thick
  • 1 onion, chopped
  • 1 tablespoon steak seasoning (recommended: Montreal Steak Seasoning by McCormick)
  • 1 tablespoon chili powder
  • 3 tablespoons dark brown sugar
  • 3 tablespoons Worcestershire sauce
  • 1 (14.5-ounce) can tomato sauce
  • 9 soft burger rolls – like at the ballpark

Heat the extra-virgin olive oil, a turn of the pan, in a deep skillet over medium-high heat. Add meat and crumble as it browns. Add chopped hot dogs after 3 to 4 minutes then cook 3 to 4 minutes more. Add the onions to the pan and cook to soften, 5 to 6 minutes more. In a bowl mix the spices, sugar, Worcestershire and tomato sauce. Pour sauce over the meat and simmer a few minutes to combine flavors. Slop onto buns and serve.
