Crock Pot Chicken

It’s that time of year…

There’s a chill in the air…

The kids are booked wall to wall with activities…

And I’m late.

I’m always late.

In my efforts to be SuperMom something always falls through the cracks.

So this week is all about Mom’s best helper…

The CROCK POT!

It’s what keeps me from turning into a crack pot.  See what I did there?  Jeez, never mind.

Anyway, here ‘s a little ditty you can throw together while you get the kids lunches packed…

Turn it on…

Head out the door…

GO, GO, GO all day long…

and when you get home….

DINNER IS READY!

recipes for kids   Crock Pot Chicken

1T olive oil

1 1/2 pound package skinless chicken thighs

S&P

1/2 bulb fennel sliced

1 large onion sliced

2 garlic cloves minced

1 t dried oregano

1 8 oz package button mushrooms quartered

1 can diced tomatoes, draned

10 green olives sliced

1 can low fat cream of mushroom soup

1 can low fat cream of celery soup

1 cup dry white wine

1/2 cup shredded romano cheese

recipes for kids   Crock Pot ChickenIn a large sauce pan heat olive oil over medium high heat.  In your crock pot, line the bottom with chopped fennel and onion.Season chicken on both sides with S&P.  When pan is hot add chicken and sear on both sides until brown.  Remove from heat and place on top of veggies in the crock pot.  In the hot sauce pan add in mushrooms and cook for a minute or so.  Toss in diced tomatoes.  Season with S&P and oregano.  Toss in olives.  Add in your white wine and stir to pick up all the browned bits on the bottom of the pan.  Pour in your soups and mix well to combine.  Pour your sauce mixture on top of your chicken in the crock pot.  Sprinkle with cheese.  Cook on low for 7 hours.  Serve with potatoes or brown rice.

Alexis came up with an awesome recipe for Caramel Apple Bars that the boys just loved. You have to try it…

Caramel Apple bars

Ingredients:

1 1/4 cups all-purpose flour
1/4 cup plus 1/2 cup firmly packed brown sugar
1/2 cup (1 stick) butter or margarine
2 large eggs, beaten
1 teaspoon vanilla extract
2 Golden Delicious apples, cored and chopped
1 cup caramel candies, each cut in quarters
1/2 cup chopped walnuts or pecans

Directions:

contests   Winner Winner Apple Dinner!1) Heat oven to 350 degrees F. Lightly grease a 9-inch square baking pan. In medium-size bowl, combine 1 cup flour and 1/4 cup brown sugar. Cut in butter until mixture resembles coarse crumbs. Transfer mixture to pan and press in an even layer in bottom of pan. Bake 10 minutes.

2) In same mixing bowl, combine eggs, vanilla, 1/2 cup brown sugar, and remaining 1/4 cup flour; stir in apples, caramels, and nuts. Pour over bottom crust. Bake 30 to 35 minutes or until golden. Cool slightly; cut into quarters lengthwise and crosswise to make 16 bars. Cool completely.contests   Winner Winner Apple Dinner!

Cheesy Macaroni Surprise

Yes I’ve been on a casserole kick.

I can’t help it.

I just love the fact that they can be made in advance!

And with school starting and activities heating up I just like to know that a yummy dinner the boys will like can get on the table fast.

There is nothing not to like in this dish.

I toss in some protein and veggies to make it a complete meal in one.

Not to mention the fact the boys like all the stirring help they get to do.

Now let’s get to the good stuff!!

Cheesy Macaroni Surprise

Serves: 8  Prep Time:  10 minutes  Cook time: 35 minutes

1 lb wagon wheel pasta

3 T  butter unsalted

3 T all purpose flour

3 cups whole milk

1/2  t fresh grated nutmeg

2 cups shredded sharp cheddar cheese

1 cup shredded swiss cheese

1/2 kielbasa link, diced

1 10 oz box frozen peas

Preheat oven to 375 degrees.  Set a large pot of water over high heat to boil.  In a large saucepan melt butter over medium high heat.  Whisk in flour and cook for 1 minute.  dinner   Cheesy Macaroni SurpriseSlowly whisk in milk, and bring to a gentle boil, stirring constantly.  Once the milk has thickened add in nutmeg and season with S&P.  Reduce to medium low heat and melt in cheddar and swiss cheeses.  Allow to cook on low for a few minutes.

When water is boiling season water with salt and add pasta.  Note package cooking time and reduce by 2 minutes, the macaroni will continue cooking in the oven later.  Once pasta is cooked, drain and return to pot.

Add your peas and sliced kielbasa to your cheese sauce and pour over the pasta.  Mix well.  dinner   Cheesy Macaroni SurpriseTransfer to a greased 13×9 baking  dish and top with additional cheese if desired.  Bake in a 375 degree oven for 30 minutes.
