Grilled pork chops with grilled pineapple and blueberry sauce

Blueberry week rolls on!

We grilled up some yummy pork chops…

Then topped them with a delicious grilled pineapple and blueberry sauce.

Amazing!

WHAT YOU NEED:

Grilled pork chops (we marinated ours in teriyaki sauce and grilled them for 10 minutes)

1/2 pineapple, cubed and grilled with pork chops

1 T butter

2 cups blueberries (organic and locally grown if possible)

1/4 cup white wine

1/4 cup maple syrup

3 T brown mustard

S&P

WHAT TO DO:

In a medium sauce pan heat the butter over medium high heat.  Toss in blueberries and grilled pineapple.  Let the blueberries heat up and start to burst.

Once the blueberries have cooked for about 4-5 minutes add in white wine and allow alcohol to burn off.  Pour in syrup and let cook for another 5 minutes.

Stir in mustard and season with S&P.

Allow sauce to simmer until pork chops are cooked and have rested for at least 10 minutes.

Pour sauce over pork chops and enjoy!

Easter Week – Easter Egg Pizza

The boys have been asking for Pizza…

They love to make the pizza.

And since we’re coming up on Easter

They decided to make and Easter Egg Pizza.

So we grabbed some healthy toppings…

ok, and some pancetta too.

And formed our crust into an egg shape.

Voila!

The Easter Bunny is going to LOVE  this one…

1 pizza dough or whole wheat pizza dough (I picked mine up from our local pizzeria)

1 cup pizza or spaghetti sauce (I use Francesco Rinaldi ToBe Healthy Tomato Sauce)

2 cups shredded part skim mozzarella cheese

1 red pepper sliced into rings

1 green pepper sliced into rings

1 orange pepper sliced into rings

Pineapple cubes

1/4 cup pancetta diced

WHAT TO DO:

Preheat your oven to 400 degrees.

Roll out your pizza dough on a floured surface.  Work into the shape of a giant egg.  Place onto a baking sheet or pizza stone.

Add your sauce and cover the dough leaving and inch surface around the edge.  Cover with cheese.

Now grab your toppings and let the kids at it and decorate their giant easter egg.

You’ll notice that the red peppers didn’t quite make it to our pizza…they went straight into Cooper and Brady’s mouth.

Now bake at 400 degrees on a low oven rack for 20 minutes.

Passover Week – Tropical Kugel

Serves  8-10  Prep time:  25 minutes Cook Time: 55 minutes

WHAT YOU NEED:

1 16 ounce package Kosher for Passover Noodles

(like Manischewitz Passover Gold Egg Noodles)

½ cup unsalted butter, melted

6 large eggs

2 cups sugar

2 cups sour cream

1 t coconut extract

1 t cinnamon

1 cup sweetened coconut milk

1 cup cottage cheese

¾ cup diced pineapple

1 t kosher salt

Topping:

3/4 cup matzoh, crushed

½ cup shredded coconut

3 T unsalted butter, melted

WHAT TO DO:

Preheat your oven to 350 degrees.  Bring a large pot of water to boil.  When it’s boiling salt the water well and add noodles.  Cook to al dente, about 1 -2 minutes shy of package directions for fully cooked noodles.  Drain well and toss with melted butter.

While your noodles cook grab a large mixing bowl.  Stir together eggs, sugar, sour cream, coconut extract, coconut milk, and cottage cheese.  When well blended, gently fold in your pineapple chunks.   Add noodles and mix well.

In a small bowl combine remaining melted butter, matzoh and coconut.

Transfer noodle mixture to a greased 13×9 baking dish.  Top with graham cracker mixture.  Bake uncovered at 350 degrees for 50-55 minutes.  Let stand for 15 minutes before serving.

Try this fun fruity version of the good ol’ fashioned kind that Bubbie used to make.

It’s like being in the islands…on Hanukkah.

Serves  8-10  Prep time:  25 minutes Cook Time: 55 minutes

Try this fun new spin on Bubbie’s traditional noodle kugel.  This one has the feel of the islands infused into its layers of yummy creamy goodness.

½ cup shredded coconut

3 T unsalted butter, melted

Trust me…This is the most delicious kugel you have ever had.  Try not to eat the whole pan before Bubbie gets to try it.   Not that I ate the whole pan, well not on purpose at least…

Hawaiian Pizza – One Arm Wonder

Hawaiian Pizza

Serves 6 Prep time: 10 minutes Cook time: 10 minutes

1 store bought pizza crust
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup diced ham
1 can cubed pineapple

Preheat the oven to 425 degrees. Remove pizza crust from wrapper and place on a baking sheet. Cover with pizza sauce leaving a one inch border around the sides. Sprinkle with cheese then top with diced ham and pineapple. Cook at 425 for 8-10 minutes. Slice with pizza cutter and enjoy with salad!

Hawaiian Pizza

Serves: 6  Prep Time:  6 minutes  Cook time:  18 minutes

1 store bought refrigerated pizza dough

1/2 cup pizza sauce

2 cups shredded mozzarella cheese

1/2 can pineapple chunks

1 package diced ham

1 jalapeno seeded and sliced (optional)

Preheat your oven to 400 degrees (or whatever you dough tells you to).

On a large baking sheet stretch out your dough to fit.  Pour on your sauce and spread it around with a spoon leaving a 1 inch rim on each side without sauce, that is your crust.  You can use more sauce if you like, my family likes light on the sauce.

Sprinkle the sauce with plenty of cheese, reserving just a bit to the side to put on top of the toppings.  Next arrange your ham and pineapple as you like.  Let the kids do this!  They have a blast.  I put sliced jalapeno on my half of the pizza because the rest of my family are a bunch of wusses when it come to the super spicy stuff.  Top with a bit more cheese and bake for 17 minutes or until golden brown.  dinner   Hawaiian Pizza

Pull it out of the oven and serve it up with a big salad.  Game on!  Enjoy!
