I’m just going to come right out and say this…This is not a meal for the kiddos. This is a put the kids to bed early, pour yourself a glass of vino, light some candles, and pick up a movie date night dinner for you and your sweetie. These are the kinds of dinners you need from time to time, ya know what I mean?

This is a date night dinner by a different Alex. It’s by Alex Guarnaschelli, she’s the host of the Food Network’s Alex’s Day Off, oh yeah, you know I’m going to like a show called that. Anyway I watched her make it and while it took me a couple of hours I followed her recipe word for word, and if you’ve been following along, you know that NEVER happens. Yes I do have recipe ODC.  But this was a good one.  Trust me, it’s a really  good one. What is it?

Skillet Fried Pizza with Roasted Mushrooms and Charred Broccoli Rabe Pesto recipe courtesy of the other Alex
Pizza:

2 1/4 teaspoons active dry yeast 1 1/2 cups warm water (about 110 degrees F)
3 1/2 cups all-purpose flour plus extra for dusting and rolling
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 scant tablespoon honey

Pesto:

1 pound broccoli rabe, washed and the ends trimmed
8 to 10 tablespoons extra-virgin olive oil
Salt
2 teaspoons paprika
2 cloves garlic, peeled
1 1/2 cups grated Parmesan
1/2 cup basil leaves, stemmed, washed and dried
Mushrooms: 1 pound white button mushrooms, washed and the stems trimmed
Salt
Garlic powder
1 pound fresh mozzarella, thinly sliced

recipe of the day   Date Night DinnerFor the dough: In a bowl, combine the yeast and warm water. Stir to dissolve the yeast and allow the mixture to rest for 5 minutes. Using a sieve or strainer, “sift” about half of the flour over the yeast mixture and blend until smooth with your hands. Add the salt, pepper and honey and mix to blend. Sift in the remaining flour and mix to blend. Lightly flour a cutting board or flat surface. Turn the pizza dough onto the floured area and knead for 3 to 5 minutes. The flour should feel smooth and the ingredients fully integrated. Add the dough to a lightly oiled bowl. Cover with plastic wrap and let it “rest” in a warm place until it has doubled in volume, about 1 1/2 hours. Press gently on the dough and turn it onto a floured surface. Divide the dough into 4 equal parts, rolling each quarter into a loose ball. Cover with a clean kitchen towel and allow the dough to “rest” for an additional 15 minutes. Flatten each ball, 1 at a time, and roll into a 6-inch round. Make the pesto: In a medium bowl, add the broccoli rabe, 2 tablespoons of the olive oil and salt and the paprika to taste; stir to combine. Heat a large saute pan over high heat and add the broccoli. Keep the heat high, allowing it to brown and char on the edges. When the broccoli rabe is tender when pierced with the tip of a knife, remove from the heat and allow it to cool. Put the broccoli rabe on a cutting board and finely chop. Transfer to a bowl. Put the garlic through a garlic press and add to the bowl. Stir in the Parmesan, 2 more tablespoons of the olive oil and the basil leaves. Taste for seasoning. Cook the mushrooms: In another saute pan, over medium heat, add the mushrooms and a tablespoon of the olive oil. Season with salt and garlic powder, to taste. Cook until they release their water, 8 to 10 minutes.

recipe of the day   Date Night DinnerPreheat the oven to 400 degrees F. In a cast iron skillet, large enough to hold a pizza round, heat 2 tablespoons of the olive oil over medium heat. When the oil begins to smoke lightly, shut the heat off under the skillet and add 1 of the pizza rounds. Use a spatula to press gently on the top of the round to keep it relatively flat as it cooks. When you see it is slightly brown on the underside, season the top lightly with salt and pepper and flip the round to its second side. Season with salt and pepper. Repeat with remaining dough. Finish the pizzas: Arrange all of the browned rounds on baking sheets and layer with the mozzarella slices, broccoli rabe pesto and a sprinkling of mushrooms. Bake in the oven for a few minutes until the cheese melts. Season with salt and serve.

I loved this dish.  I really loved it.  I knew I couldn’t get the munchkins to go for it because let’s be honest, the whole damn thing is green.  Also broccoli rabe tends to be a bit bitter and coupled with the mushrooms, well, let’s just say I figured I’d be making them a PB&J if I put this one in front of them.  That makes it all the more special to share it with just the hubs…Happy Date Night!

So the other day I’m returning some wonderful comments and I stumble upon a delightful little blog known as My Pink Flip Flops, cute little name huh?  Well I’m surfing around her site and come across a recipe that I had to make right away!  So smart and easy and now you can make it too.  I made mine a bit differently but what an awesome idea.  Here it is.

1 tube refrigerated crescent rolls

1/2 cup shredded mozzarella

1/4 cup fresh mozzarella

1/2 cup spaghetti sauce

16 pepperoni slices

1/4 cup baby spinach

1 T parmesan cheese

1 t garlic powder

cooking spray

Heat the oven to 375 degrees.  Spray a baking sheet with cooking spray and set aside.  Unroll your crescent roll triangles and lay them on a cutting board.

Add a dollop of sauce to the long fat side of the triangle.  Top with cheese and two pepperoni slices.  Roll into a crescent.  Place on tray.  I made 4 this way then four with just fresh mozzarella, pepperoni, and baby spinach.

Switch up your ingredients and have fun with it!

recipe of the day   Pizza puffs & B2BOnce the puffs are all rolled up on the baking sheet spray with a bit of cooking spray and sprinkle on garlic powder and parmesan cheese.  Bake at 375 for 12-15 minutes.  Serve ‘em hot.  Make a lot, they go quick!

Supreme Upside Down Pizza

Supreme Upside Down Pizza

In the mood for something quick hearty and satisfying?  Put down that phone and save yourself the delivery charge…no, I’m not talking DiGiorno, I’m talking about a homemade delight that will have your kids (and you) jumping for joy.


recipe of the day   Supreme Upside Down Pizza

Serves: 6-8                        Prep time: 10 minutes                        Cook time: 30 minutes

1 lb  ground beef

3/4 bulk italian sausage

1 c  mushrooms, sliced

1 small onion, chopped

1 t  dried oregano

2 cloves  garlic, chopped

S&P

1 28 oz can  chopped tomatoes

1 8 0z can  tomato sauce

1 ½ c  shredded mozzarella cheese

1 tube  refrigerated pizza dough

1 8 oz container fresh mozzarella cheese

In a large skillet brown ground beef and sausage over medium high heat.  Once browned add in mushrooms, onions, and garlic.  Season with oregano and S&P and stir to combine.  Cook for 5 minutes or until veggie start to soften.  Stir in tomato sauce.   Bring to a boil, then turn down to a low simmer.  Cover and let cook for 10 minutes on low heat.

recipe of the day   Supreme Upside Down PizzaPour meat mixture into a 13×9 baking dish.  Top with shredded cheese.  Open up pizza dough tube, unroll and top cheese with it.  Bake for 15-17 minutes.  Top with dollops of fresh mozzarella and bake for an additional 5 minutes or until cheese is melted.  Serve with a side salad and your kids will stand on their heads for this one time and time again.

Potato Pizza Pizzaz

Potato Pizza Pizzaz

In college I used to LOVE Pizzeria Uno’s mashed potato pizza. This is an ode to the days of old….

recipe of the day   Potato Pizza Pizzaz

Serves:  Up to 8  Prep time:  20 minutes  Cook time:  25 minutes

1 store bought pizza crust

1 bag frozen Ore-Ida potatoes

1/2 cup milk

2 T butter

2 T parmesan cheese

S&P

1 pound bacon, chopped

1 onion, diced

8 oz mushrooms, sliced

2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

chopped parsley, for garnish

chopped scallions, for garnish

sour cream

Preheat oven to 425 degrees.  Unroll your pizza dough and stretch it out over a large baking pan, or you can roll it out into a ball and make a round pizza if you like.  Poke a couple of holes into the dough with a fork and bake the uncovered dough for 10 minutes.  While your dough cooks place your potatoes in the microwave and cook on high for 10 minutes.  Pour potatoes into a bowl and add milk, butter, parmesan cheese, and season with S&P.  Mash well and set aside.

Heat a large skillet over medium high heat and brown your bacon until just crispy.  Remove with a slotted spoon and set aside.  In the bacon drippings saute onion, mushrooms and garlic until soft, about 7 minutes.

Remove crust from oven and spread out your potato mixture to cover leaving a one inch border for your crust.  Top potatoes with mushrooms onion and garlic mixture.  Then sprinkle on cheese to cover well.  Top with bacon.

recipe of the day   Potato Pizza PizzazReturn pizza to oven and cook for an additional 10 minutes.  Slice it up and top with sour cream and parsley or chopped scallions.  Serve as an appetizer or with a salad for a main meal.

Hawaiian Pizza – One Arm Wonder

Hawaiian Pizza

Serves 6 Prep time: 10 minutes Cook time: 10 minutes

1 store bought pizza crust
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup diced ham
1 can cubed pineapple

Preheat the oven to 425 degrees. Remove pizza crust from wrapper and place on a baking sheet. Cover with pizza sauce leaving a one inch border around the sides. Sprinkle with cheese then top with diced ham and pineapple. Cook at 425 for 8-10 minutes. Slice with pizza cutter and enjoy with salad!
