So the other day I’m returning some wonderful comments and I stumble upon a delightful little blog known as My Pink Flip Flops, cute little name huh? Well I’m surfing around her site and come across a recipe that I had to make right away! So smart and easy and now you can make it too. I made mine a bit differently but what an awesome idea. Here it is.

1 tube refrigerated crescent rolls

1/2 cup shredded mozzarella

1/4 cup fresh mozzarella

1/2 cup spaghetti sauce

16 pepperoni slices

1/4 cup baby spinach

1 T parmesan cheese

1 t garlic powder

cooking spray

Heat the oven to 375 degrees. Spray a baking sheet with cooking spray and set aside. Unroll your crescent roll triangles and lay them on a cutting board.

Add a dollop of sauce to the long fat side of the triangle. Top with cheese and two pepperoni slices. Roll into a crescent. Place on tray. I made 4 this way then four with just fresh mozzarella, pepperoni, and baby spinach.

Switch up your ingredients and have fun with it!

Once the puffs are all rolled up on the baking sheet spray with a bit of cooking spray and sprinkle on garlic powder and parmesan cheese. Bake at 375 for 12-15 minutes. Serve ‘em hot. Make a lot, they go quick!

Ok now on to business, Business 2 Blogger that is. Have you all heard of them? You can check them out right HERE. I just signed up with these guys and so far it’s been great. They send you an email every morning with a whole bunch of opportunities to get in touch with business who are looking for bloggers to try new stuff for them. It’s only my first day but so far, I like what I see. I’ll keep you all posted. In the meantime, you should swing on over and check them out for yourself.

In college I used to LOVE Pizzeria Uno’s mashed potato pizza. This is an ode to the days of old….

Serves: Up to 8 Prep time: 20 minutes Cook time: 25 minutes

1 store bought pizza crust

1 bag frozen Ore-Ida potatoes

1/2 cup milk

2 T butter

2 T parmesan cheese

S&P

1 pound bacon, chopped

1 onion, diced

8 oz mushrooms, sliced

2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

chopped parsley, for garnish

chopped scallions, for garnish

sour cream

Preheat oven to 425 degrees. Unroll your pizza dough and stretch it out over a large baking pan, or you can roll it out into a ball and make a round pizza if you like. Poke a couple of holes into the dough with a fork and bake the uncovered dough for 10 minutes. While your dough cooks place your potatoes in the microwave and cook on high for 10 minutes. Pour potatoes into a bowl and add milk, butter, parmesan cheese, and season with S&P. Mash well and set aside.

Heat a large skillet over medium high heat and brown your bacon until just crispy. Remove with a slotted spoon and set aside. In the bacon drippings saute onion, mushrooms and garlic until soft, about 7 minutes.

Remove crust from oven and spread out your potato mixture to cover leaving a one inch border for your crust. Top potatoes with mushrooms onion and garlic mixture. Then sprinkle on cheese to cover well. Top with bacon.

Return pizza to oven and cook for an additional 10 minutes. Slice it up and top with sour cream and parsley or chopped scallions. Serve as an appetizer or with a salad for a main meal.

I was inspired by fellow blogger Me, Myself, & Pie for this recipe. She made a delicious Turkey and Basil Calzone so I whipped up a different version. Thanks so much for the great idea. Go on over and tell her a big thank you too!

Turkey & Sausage Calzone

Serves: 4 Prep Time: 30 minutes Cook Time: 15 minutes

Cooking spray

1 T olive oil

1 small onion, chopped

2 garlic cloves, minced

8 oz. sliced mushrooms

1 pound ground turkey breast (original recipe called for ground chicken)

1 T tomato paste

¼ cup red wine

1 large can crushed tomato

¼ t crushed red pepper

1 t dried oregano

S&P

1 (13.8-ounce) can refrigerated pizza crust dough

½ cup shredded part-skim mozzarella cheese you could also use fresh mozzarella for really super gooey fillings!

¼ cup parmesan cheese for sprinkling.

½ t garlic powder

½ t S&P

Preheat oven to 425°.

Heat a large nonstick skillet over medium-high heat. Add oil and sausage. Allow sausage to brown, about 4 minutes. Remove sausage with a slotted spoon and set aside. Add onions and mushrooms to pan. Seaon with salt and pepper. Cook until soft, about 5 min. Add garlic,s sausage and turkey to pan and sauté 5 minutes or until turkey is no longer pink, stirring to crumble. Stir in tomato paste, cook for a minute or so. Deglaze the bottom of the pan, scraping up all the good bits, with your red wine. Stir in your tomatoes and season with red pepper, oregano, and more S&P. Reduce heat, and simmer 15 minutes, stirring occasionally.

Unroll dough onto a baking sheet coated with cooking spray; cut dough into quarters. Pat each portion into an 8 x 6–inch rectangle. Divide turkey and sausage mixture evenly among rectangles; top each serving with 2 tablespoons cheese. Working with one rectangle at a time, fold dough in half over filling, pinching edges to seal. Repeat procedure with remaining rectangles. Crimp the edges with a fork. Sprinkle the tops with S&P, garlic powder, and parmesan cheese. Bake at 425° for 12 minutes or until golden.

Serves: 4 Prep time: 5 minutes Cook time: 10 minutes

Brady is ready to make his pizza man

4 english muffins

½ c pizza sauce

1 c shredded mozzarella cheese

cherry tomatoes, quartered

orange bell peppers, sliced thinly

mushrooms, sliced thinly

Preheat oven to 350 degrees. Split muffins in half and toast very very lightly. Once toasted place cut side up on a cutting board. Spread sauce evenly over each muffin. Top all the halves with cheese to cover.

Place two slices of mushrooms close to the top of each muffin, at about 10 and 2 if it were a face clock, then move them in a bit toward center and these will be the eyes of your muffin man. Use your bell pepper to make a mouth, a tomato quarter for the nose.

Brady's tasty masterpiece

Get creative, use olives for eyeballs and green pepper slivers for eye lashes. Have fun with this, let your kids decorate it. Make a scary face, a smiley face, an animal face. Go crazy with this one. Bake your finished muffin faces for 10 minutes until your cheese is nicely melted. Serve alongside veggie crudite and enjoy!

Serves: 6 Prep Time: 6 minutes Cook time: 18 minutes

1 store bought refrigerated pizza dough

1/2 cup pizza sauce

2 cups shredded mozzarella cheese

1/2 can pineapple chunks

1 package diced ham

1 jalapeno seeded and sliced (optional)

Preheat your oven to 400 degrees (or whatever you dough tells you to).

On a large baking sheet stretch out your dough to fit. Pour on your sauce and spread it around with a spoon leaving a 1 inch rim on each side without sauce, that is your crust. You can use more sauce if you like, my family likes light on the sauce.

Sprinkle the sauce with plenty of cheese, reserving just a bit to the side to put on top of the toppings. Next arrange your ham and pineapple as you like. Let the kids do this! They have a blast. I put sliced jalapeno on my half of the pizza because the rest of my family are a bunch of wusses when it come to the super spicy stuff. Top with a bit more cheese and bake for 17 minutes or until golden brown.

Pull it out of the oven and serve it up with a big salad. Game on! Enjoy!
