Baked Eggs

Sometimes you just have to throw logic out the window.

Today is one of those days.

It’s a breakfast for dinner kind of day.

This is a great and delicious recipe for breakfast or dinner.

The kids like to crack the eggs into little ramekins to make their own.

And they love to dip the bread!

Serves 4  Prep Time: 5 minutes  Cook Time: 10 minutes

WHAT YOU NEED:

½ t minced fresh garlic

½ t minced fresh thyme leaves

½ t minced fresh rosemary leaves

½ t minced fresh oregano leaves

2 T minced fresh parsley

2 T freshly grated Parmesan

8 extra-large eggs

4 T heavy cream

2 T unsalted butter

S&P

Whole Wheat Toast for dipping

WHAT TO DO:

Preheat the broiler for 5 minutes and place the oven rack 6 inches below the heat.

Combine the garlic, thyme, rosemary, oregano, parsley and Parmesan and set aside. Carefully crack 2 eggs into each of 4 small bowls or teacups without breaking the yolks.  You aren’t going to bake them in these, you just want to have them ready to go.

Place 4 individual gratin dishes on a baking sheet. Place 1 tablespoon of cream and 1/2 tablespoon of butter in each dish and place under the broiler for about 3 minutes, until hot and bubbly. Quickly, but carefully, pour 2 eggs into each gratin dish and sprinkle evenly with the herb mixture, vegetarian recipes for kids kid favorite recipes breakfasts    Baked Eggsthen sprinkle liberally with salt and pepper. Place back under the broiler for 5 to 6 minutes, until the whites of the eggs are almost cooked. (Rotate the baking sheet once if they aren’t cooking evenly.) The eggs will continue to cook after you take them out of the oven. Allow to cool a bit and serve hot with toasted bread.

Noteworthy Nugget:  I leave off the herbs for my pickiest eater.  I give him extra cheese.  You could make this with cheddar cheese too or any other kind of cheese your kids really like!

These are an ode to a recipe I made with my mom when I was a kid out of my favorite kids cookbook.  Walt Disney’s Mickey Mouse Cookbook.  These were sort of like Smee’s Baked Eggs.  I think I made everything in that book when I was a kid.  Wish I could find it!

Right over the top!

Buy a bunch in the store or at the farmers market.

Bring them home and wash them…

Wrap them in paper towels…

Place them in a plastic ziploc bag…

And keep them in your crisper for a week or two.

My favorite is Basil…

Cinderella’s Prince Charming’s Prime Rib Roast

This dish was originally called “Someday My Prince Will Come Prime Rib” but then I was told that Snow White sang that song, not Cinderella.

So I decided to come up with a dish inspired by the boys in Cinderella…

Namely the Prince.

Prince Charming.

This got me thinking about my Prince Charmings

And their favorite dishes…

What do all boys like?

Meat!

Good meat!

Prime rib meat!

Voila!

This dish did the trick!

In fact, they dove into it so fast that I didn’t get a good after shot.

I guess that’s the sign of a really really yummy dinner.

WHAT YOU NEED:

5-7 rib, bone in prime rib roast

S&P

3 cloves garlic

3 springs thyme

3 springs rosemary

olive oil

WHAT TO DO:

Let meat settle to room temp. Usually 2-3 hrs before cooking.

Preheat oven to 450 degrees.

Cover and I mean cover the whole outside of roast heavily with salt and pepper. Cut 3 slits in the meat and stick a garlic clove inside each slit. Drizzle with olive oil and toss your fresh herbs on top.

Cook for 20 minutes on 450°  to brown up the outside.

Reduce heat to 350° temp hits about 140° to 150°. About 2 hours or so.

Make sure your therometer is in the meat and not in the gap between ribs and meat.

Let sit for 1/2 hr temp will rise another 10° or so. Slice and enjoy.

That is for med-well. If you want it medium or medium rare cut back on the heating time.

I love all things outdoors this time of year.

I wish, I study, I pine, and I want my own garden.

I know I know, it’s not right…to the plants I mean, but they’re pretty low maintenance and I’ve only almost killed them once.

Now I didn’t allow myself to actually plant them.

But they’re hanging in there on my deck.

It came prearranged and it’s still alive!

Ok, truth be told, I almost killed this guy twice but he’s pretty resilient and seems to be still kicking.

Just thought I’d share a bit of my garden, or lack thereof, with you.  It’s sort of a confession for me.  Now you know where I get all my fresh herbs and my mom knows what a bitter disappointment I am in the garden.  She certainly did not pass on her green thumb…sorry ma, must not be hereditary.

Rainy Day Rib Eye

Serves 2  Prep Time: 5 minutes  Cook time: 20 minutes

2 rib eye steaks (or NY Strip or even fillet!)

4 cloves garlic, sliced

1 T olive oil

3 T butter, unsalted

1 sprig fresh rosemary (or if you forget the fresh herbs at the store because your 1 year old was screaming and you had to get out dried will do in a pinch)

2 sprigs fresh thyme (uh, ditto)

S&P

I threw a little truffle salt on mine too.  YUM!!!

Preheat the oven to 350.  In a cast iron skillet heat your olive oil over medium high heat.  (NOTEWORTHY NUGGET – when heating a cast iron skillet (or any skillet for that matter) over high heat, don’t walk away to help your kids figure out the Spongebob Squarepants Wii game for 10 minutes.  This will surely set off the smoke alarm and wake up the baby…I’m just saying.)

Season both sides of your steaks with S&P and truffle salt if it’s laying around.

When the cast iron skillet is good and hot (and it’s the 2nd time you’ve done this since the first time the Shelton Volunteer Fire Department almost had to come and desmoke your downstairs) lay your steaks in to sizzle.

After about 3-4 minutes the first side should be nice and brown.  Flip ‘em over and add your butter, garlic, and herbs to the pan.  While the butter melts douse the top of the steaks with the melty garlicky herby butter and then toss them into the oven for 10 minutes.
