Kids Fun Food Week – Spaghetti Pie

Want to know a great way to use that leftover spaghetti and have the kids enjoy creating in the kitchen?

Bake up a Spaghetti Pie!

WHAT YOU NEED:

Leftover spaghetti, at least 8 ounces (1/2 a box) whole wheat if you have it

1 lb. ground turkey

1 onion, chopped fine

1 clove garlic, chopped fine

1 sweet red pepper, diced

1 small zucchini, diced

S&P

16 ounces Healthy Veggie Marinara Sauce (if you don’t have time to make your own Francesco Rinaldi has a wonderful line of heart healthy sauces like ToBe Healthy Tomato Basil you can use to save time.)

3 cups low fat shredded mozzarella cheese

fresh basil, for garnish

WHAT TO DO:

Preheat your oven to 375 degrees.

Heat a large sauce pan over medium high heat.  When it’s hot, add in your turkey and let it get nice and browned.

Once it’s brown, toss in your onion, garlic, pepper and zucchini and let them cook down a bit, til they’re soft, about 5-7 minutes.  Season it all up with some S&P.

Add in your pasta sauce and bring it up to a boil then knock it back to simmer for a few minutes on low.

Take it off the heat and allow to cool for a few minutes.

Add in your cooked spaghetti and 1 cup of cheese then transfer the mixture to a pie dish.

Top off with remaining 2 cups of cheese and place it into the oven.

Bake at 375 for 30 minutes.

Voila…

Is this show always on in your house too?  I’m pretty sure, at this point, I can recite every line from every episode.  I’ll be honest, as far as Nick shows go, iCarly is heads and shoulders over the rest of the lot.  That Big Time Rush show is enough to make me Big Time Rush to turn it off.  Incredibly annoying!  But there’s something about those iCarly kids.  They’re funny, sweet, and though they say stupid and butt WAY TO MUCH (are you listening Dan Schneider????) I’d rather the kids watch them than another annoying episode of Fanboy and Chum Chum, Spongebob, or Phineas and Ferb, and I really am glad they’re over the Wiggles.

recipes for kids memoirs from mommyville kid favorite recipes dinner    iCarly’s Spaghetti TacosSo if you’re living under a rock, or God help you, your kids are still into the Wiggles or even worse, Teletubbies, then here is the low down.  Carly Shea lives with her big brother Spencer and with the help of her two best friends, Freddie and Sam, they  make the web show iCarly for all to adore.  Spencer, being the artist that he is, doesn’t like steamed halibut for dinner, it’s too boring…he likes to make Spaghetti Tacos for dinner.  For months my kids have been on my butt to make Spencer’s spaghetti tacos.  So finally I did.  And now we’re bringing them to you.  The kids loved them!  I couldn’t bring myself to eat them.  I’m going to give you the same recipe that they give you on the iCarly website.  Note, I did add some veggies to mine because the carbo load was making me twitch.  You’ll have to make the judgement call on that one.

“Okay, some might say my brother Spencer is a little DIFFERENT. He makes sculptures outta junk, he has a bright, sparkly sock collection, and he is obsessed with making our toilet water blue. But, sometimes he does things that are weird AND good — like make Spaghetti Tacos. Who else would put together crunchy taco shells with spaghetti and make it soooo delish!?!? So, I thought I’d share his awesome Spaghetti Tacos recipe with you all!

Here it is:
Get taco shells.
Get spaghetti (with meat sauce).
Get a BIG spoon.

Oh and for the record, we will not be attempting iCarly’s “Chicken Soup in a Toilet.”  Thanks but no thanks….living with 4 boys the only thing that goes into that pot, is Lysol!  Ya know?

Spaghetti & Meatballs

Serves: 4                        Prep time:  20 minutes            Cook time: 30 minutes

FOR THE MEATBALLS

1 lb                                    ground beef

¼ c                                    milk

1 clove                                    chopped garlic

¼ c                                    chopped onions

¼ c                                    chopped red pepper

¼ c                                    chopped carrots

¾ c                                    bread crumbs

1 whole                        egg

¼ c                                    parmesan cheese

S&P

FOR THE HEALTHY VEGGIE MARINARA SAUCE

2 T                                    Extra Virgin Olive Oil

2 cloves                        garlic

¼ c                                    chopped onion

¼ c                                    chopped red pepper

¼ c                                    chopped carrots

¼ c                                    chopped mushrooms

1 28 oz can                        san marzano chopped tomato

1 ½ T                                    dried Italian seasoning

S&P

1 box                                    linguine, spaghetti, whatever floats your boat

Preheat the oven to 375 degrees.  Get out a large cookie sheet and spray it with cooking oil, set aside.  Put on some water to boil for your pasta.

In a large pot or dutch oven heat the oil over medium high heat.  When the oil is hot add onion, carrots, and mushrooms.  Sautee until veggies are soft and onions are translucent, about 7-9 minutes.

Meanwhile in a large bowl combine all the ingredients for the meatballs.  Mix them all together using your hands and form into little golf balls.  Put them on your greased cookie sheet and slide into your oven.  Bake for 25 minutes.

When your veggies are soft add the garlic to your pot.  Cook for 1-2 minutes stirring often.  Sprinkle in S&P and your Italian seasoning.  Stir.  Pour in tomatoes and stir to combine.  Bring your sauce up to a boil and then reduce to a simmer. Your water should be boiling now so add some salt and throw in your pasta, cook according to package.

When your meatballs are done slide them into your sauce and let them cook an additional 5 minutes in the sauce.  Drain your pasta and spoon out onto plate.  Scoop meatballs and sauce on top of the pasta and serve with a side salad and crusty bread to scoop up extra sauce!  I threw some leftover broccoli in as well.  recipes for kids kid favorite recipes dinner    Spaghetti & Meatballs

Noteworthy Nugget:  You can triple or quadruple this recipe for sauce and freeze it in plastic baggies or Tupperware containers to always keep on hand!  You can also make extra meatballs and freeze them for Grab n Go  meatball subs in a snap.
