Superbowl Countdown – Keegan’s Killer Kielbasa

Ok, well 4 if you count the hubs…

And let’s be honest, you have to count the hubs don’t ya?

So game days are big around here.

We’re a sports family.

Hockey.

Football.

Baseball.

Basketball.

Even soccer, or football as my mom calls it. Go Manchester United.

Anyway, we love the Superbowl.

And Keegan has asked that I post his absolute favorite again…

ARE YOU READY FOR SOME FOOTBALL?

We’re ready for some of Keegan’s favorite, and the hubs, Kielbasa

Serves: 8  Prep Time: 5 minutes  Cook time:  15 minutes

2 links polska kielbasa smoked sausage, sliced

1 cup maple syrup

1 T soy sauce

1/4 cup brown mustard

1 t liquid smoke (optional)

In a large skillet over medium high heat, warm sausage until the sides just begin to crisp, about 5 minutes.  Pour in your syrup and soy sauce and stir well.  Add in mustard and liquid smoke and mix well.  Bring to a boil then knock back the heat and let simmer until sauce is thick and rich and bubbly.

Pour onto serving platter and serve with toothpicks.

Crispy Fried Wonton Pizza Bites (serves 8 )

These wonton pizza bites taste fried, but are actually baked, which keeps the kitchen smelling good, and makes life much easier if you’re feeding a crowd. They can be made a day or two in advance and heated up on Game Night.

30 wonton wrappers (I’m guesstimating 3 or 4 per person)
2 large balls of mozzarella cheese
8 – 10 tbsp marinara sauce (shop bought is fine)
30 small slices of salami
1 egg
Vegetable oil

* Pre heat the oven to 400
* Spoon a blob of marinara sauce into the center of the wonton.
* Top with a cube of cheese and a slice of salami
*Crack the egg, and give it a quick whisk.
* Use a pastry brush (or your fingers) to dab a layer of egg around the edges of the wonton wrapper, then fold over into a triangle (try to seal out air pockets)
* Repeat for the rest of the wontons
* Brush both sides of each wonton with vegetable oil and place on a baking tray
*Bake for about 10 – 15 minutes until the parcels are golden and crispy – keep an eye on them
* Season with salt and pepper then serve
They can be made in advance and warmed through in a low oven to re-heat, or forzen, then baked from frozen (15 – 17 mins)

She also has other great variations on this….

Switch out the salami for pineapple chunks and sliced ham
Or mushrooms and a drop of truffle oil
Or chopped black olives
Switch out the mozzarella for goat cheese
Or Cheddar
Replace the tomato sauce with pesto and add chopped cherry tomatoes and mozzarella
Or pine nuts, goat cheese and black olives

Superbowl Countdown Football Fries

It’s game time.

What goes better with chili and beer than french fries?

But these aren’t ordinary fries, oh no no no.

These are garlic fries perfect for the game.

Just make sure everyone eats them, then there’s no garlic breath to contend with.

1 bag extra crispy oven bake french fries

4 garlic cloves minced

1 T grill seasoning

1/4 cup extra virgin olive oil

parsley chopped for garnish

Salt

ketchup and ranch for dunking

Preheat oven to 450 degrees.  On a large baking sheet pour the contents of the bag of fries into an even layer.

In a bowl combine garlic, grill seasoning, and olive oil.  Stir to combine.  Pour over the top of the french fries and toss well to coat.

Bake at 450 degrees for 15-20 minutes until nice and crispy.  Sprinkle with parsley and salt and transfer to serving plate.  Serve alongside ketchup and ranch for dipping.

Game on!

Tasty Tidbits – Avocado

My kids love the guacamole.

I love the guacamole.

As it is guacamole season what with the Superbowl around the corner…

I thought I’d hit you with some avocado facts.

I’m an avocado kind of girl.

I was raised in Cali you know.

Like tomatoes, avocados hate the cold.

Keep them on your counter to ripen, not in the fridge.

If you need them to ripen quick, put them in a paper bag on the counter along with an apple.

If you have leftover avocado…

I’m sorry, leftover avocado?  That’s like leftover wine?  Doesn’t happen here.

…Ahem, leftover avocado?  Try and keep the pit in the leftover part and put it in a plastic baggie after sprinkling it with lemon juice.  This will keep it from turning brown.  Now you can refrigerate it.

Bring on the tortilla chips!
