We gather at someone’s house…

Everyone brings a dish.

And a bottle…

And then we really dish.

And you know me…being Ma and all.

I have to try and make the best offering.

This is my latest…

It was a hit!

Had to take advantage of all that zucchini in the garden…

Not to mention the boys gobbled these up…

And didn’t even know they were loaded with veggies!

WHAT YOU NEED:

2 medium to large zucchini grated

2 T grated red onion

1 cup corn off the cob (I slice mine from leftover grilled corn)

2 large eggs, lightly beaten

6 – 8 T flour

1 t baking powder

S&P

1 T butter

Olive oil

Toppings:

Smoked Salmon

Creme Fraiche

Chopped Scallions or chives

Capers

WHAT TO DO:

Preheat the oven to 300 degrees F.

In a large bowl combine zucchini, onion, and corn.

Stir in your eggs.

Add about 5-6 tablespoons of flour, the baking powder, and S&P. (If the batter gets too thin from the zucchini liquid, add the remaining flour.)

Heat a large  pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When it’s hot lower the heat to medium-low and drop heaping soup spoons of the zucchini batter into the pan.

Cook the pancakes until browned on each side…about 2 minutes apiece.

Remove from pan and set aside on a sheet pan…you can keep warm in the oven. They’ll stay warm in the oven for up to 30 minutes.

Serve hot.

CSA Special – Kohlrabi two ways

Well I’ve been telling you all about my new obsession with my local farm…

Stone Gardens Farm here in Shelton, CT.

vegetarian veggies vegan healthy snacks for kids kids lunch ideas kid favorite recipes side dishes healthy eating for kids featured appetizers CSA Special Kohlrabi two ways

You know how I’ve been stressing to all of you how important it is to buy local right?

So I’ve been having a blast playing with all the veggies in our box every week.

vegetarian veggies vegan healthy snacks for kids kids lunch ideas kid favorite recipes side dishes healthy eating for kids featured appetizers CSA Special Kohlrabi two ways

One that keeps popping up is this little devil…

Kohlrabi.

Now I’d heard of it.

But I’ve never tried it.

No time like the present.

vegetarian veggies vegan healthy snacks for kids kids lunch ideas kid favorite recipes side dishes healthy eating for kids featured appetizers CSA Special Kohlrabi two ways

So our farmers Fred and Stacia suggested Kohlrabi chips (ie raw) with some hummus.

The boys and I peeled it up and sliced it thin and grabbed our favorite Trader Joe’s white bean hummus from the fridge.

Ummm, didn’t go over so well.

Raw kohlrabi is strong.

Really strong.

Kind of like a cross between jicima and a radish.

I liked it, but the boys?

Uh not so much.

So I got crafty and did what I always do when they don’t like a veggie.

I tossed it with olive oil, salt and pepper and roasted those bad boys.

OH EM GEE!!!!

vegetarian veggies vegan healthy snacks for kids kids lunch ideas kid favorite recipes side dishes healthy eating for kids featured appetizers CSA Special Kohlrabi two ways

These were fantastic!

Totally mellowed out.

They’re smooth and creamy and delicious.

Toss them with some potatoes, onions and mushrooms and you’ve got the perfect oven roasted veggie side dish.

Reliving my roots at the ol’ Sunset Grill & Tap !

CSA Special – Kale Chips

My boys love chips.

Ok, well who doesn’t love chips?

But we all know that chips aren’t the best thing in the world to eat.

Enter my CSA…

The good folks down at Stone Gardens Farm provided me with the perfect alternative to the old potato chip this week.

See, I’ve told you all about my first waitressing gig at the Sunset Grill & Tap in Boston.

Well there we had a rule.

EVERY dish was garnished with a big leaf of kale.

So to me, that’s what kale was…

A garnish.

So when I got a big bunch in my CSA share box this week…

vegetarian veggies vegan healthy snacks for kids kid favorite recipes side dishes healthy eating for kids featured appetizers CSA Special Kale Chips

I wasn’t quite sure what to do with it.

Then it came to us.

The boys and I threw the kale onto a baking sheet with some olive oil and some S&P.

Voila…

The perfect chip for snacking!

Delicious and good for you!

You’ve got to try these!

Tasty Tidbit – Bell Peppers

You all have heard in the past how I’m a dipper.

Yup, I love to dip.

Anything and everything.

And clearly it’s genetic as the boys are just like me.

And one thing they really really really love to dip.

Bell Peppers!

cooking tips Tasty Tidbit Bell Peppers

They dip ‘em in ranch…

hummus…

creamy onion dip…

They’re so good!

Here’s a little fun fact that I learned not long ago…

cooking tips Tasty Tidbit Bell Peppers

You know how peppers have bumps on the bottom?

Well if it has 3 bumps it tends to be sweeter.

Perfect for eating raw and dipping.

If it has 4 bumps it will likely be a bit firmer and better for cooking with.

Ha!

Put that in your pipe and, uh, dip it!
